Gooey Butter Cake II

YUM! This was very tasty, very rich and sweet, so you can't eat too much at a time. I didn't have almond extract so I just used vanilla instead and it turned out delicious. I would love to try it with different cake mixes, chocolate would probably be SO good.

Fish Tacos

This was awesome! I didn't batter the fish, just fried it a bit in olive oil. I also added tomatoes and used high-fiber wheat tortillas. My husband praised it too!

Greek Orzo Salad

I made this tonight and it was so good! I added cooked chicken, left out the artichoke juice and for spices only used salt, pepper, parsley and oregano. Yummy yummy. I will make this again! It would be good (maybe w/o the orzo) wrapped up in a tortilla.

Quick Quiche

This was so good, and so easy. I've made it at least 5 times in the last month, a few times for dinner, a brunch, to a potluck, and for a friend after having surgery. Each time I've used the ingredients I've had on hand and it's been delicious. My favorite so far is bacon and parmesan crust, with broccoli, onion and pureed green beans (originally intended for my baby) and parm on the top. Yum!

Spanakopita II

This recipe is so wonderful! I put in a dash of nutmeg with the dill and flour - I think it really makes a difference. I also use two sheets, then cut them into strips. Watch the 'how to' video for the confidence needed to tackle the phyllo dough. They are very easy once you make them the first time. I can cook the filling and stuff and fold them in about an hour. I do cut the sheets up into four strips to make four per two sheets for appetizers, or two big ones per two sheets if they are a main dish served with a greek salad. I now have made them five times, and they are always popular and my boyfriend always begs me to make extra!

Italian Wedding Soup I

Lentil Soup III

Good, basic recipe. To make it gluten free (for a friend) I used water instead of broth, added celery, and more spices. I also added about a cup of dry brown rice. To make it husband-friendly, I then added cooked chicken and a package of taco seasoning. Okay tasting, but very healthy!

Shrimp Etoufee III

This was very good. I made some changes though. I made it for 4 instead of 10 servings. Used a can of diced chiles instead of green pepper, added a can of black beans, and used beef broth (it's what I had) instead of water. It had chowder-y taste but was less creamy. Overall very good, I would make it again and would add some rice

Grandma Johnson's Scones

These were SO good. I added lemon juice and poppyseeds to them and then drizzled them with lemon icing, delicious. I've never made scones before and I didn't realize how much they would rise, they ended up being huge, so bear that in mind when you're cutting them. I also froze half the recipe to make later and these were just as good.

Pork Chop Potato Casserole
