Italian Summer Squash Polenta Bake

This is a 5 star recipe, if you make your own polenta! I highly recommend the Basic Cheese Polenta from this site. The pieces of fried polenta on their own are delicious! Make them into this meal, and it's even better! I omitted the onion and carrots, and added in fresh steamed, chopped spinach. I am going to make this again tomorrow, my family couldn't get enough!

Beef Barley Soup

This was a great base for what became a hodge-podge of leftovers. I had no beef, so used sausage. No onion or celery, so used cabbage and mushrooms. The soup is hearty and has a wonderful "vegetable" flavor- it tastes like what you put in it, not salty or overspiced. I added the frozen peas as I served it to the kids- they cooled down the soup enough for them to eat it right away.

Basic Cheese Polenta

Delicious!! My first time making polenta, and my family and I thought this was very, very good. It's so quick and easy to make. I chilled it in a 9x13 pyrex, and used a glass to cut circles. I fried them, and was eating them straight out of the pan, before they even got a chance to be used in my recipe! My only recommendation, to make this 5 stars: Leave out the salt!! With the parmesan cheese added, this polenta is plenty salty enough already.

Lemon Pie II

YUM! I used 1/2 cup fresh lemon juice, with a little zest for a stronger flavor, and made a graham crust using cinnamon grahams. It was thick and creamy, and refreshing on such a hot day!

Sweet and Sour Chicken I

Great recipe only thing too much work unless you are off that day (I'm lazy on my work days). It is surely worth the effort. I did follow some of the suggestions since I only had regular flour so I added more salt and baking soda to the batter mix and seasoned the chicken pieces, also added in some chili pepper flakes as my family likes things a little bit spicy. Thanks for sharing.

Rhubarb Strawberry Crunch

I'm not the hugest fan of rhubarb, but even I loved this recipe. I didn't measure out the fruit in cups; just used 3 good-sized stalks of rhubarb and a 1-pound container of strawberries. I cut the sugar down to 3/4 cup and added an extra TBSP of flour, because I have had major problems in the past with overly-runny rhubarb pies. I tossed the fruit in the flour/sugar and let it sit while I made the topping, to draw some of the juices out. Did not change the proportions of the topping. I split the recipe between two 9-inch pie pans and cooked for an extra 15 minutes, until the topping was nice and crisp! Excellent consistency, didn't run at all and I loved the buttery topping!

Grandmas Cowboy Cookies

YUM! A really tasty combination of textures and flavors. I had thought the 2 cups of sugar would be too sweet, but since I used an PB with no sugar in it, the cookies were just right! I did add a 1/2 tsp. of salt, since I only have unsalted butter. I left out the cream of tartar.

Apple Crisp III

FANTASTIC recipe! I used Golden Delicious apples because they were what I had in my fridge, and did a few things differently. I mixed the 1 tsp cinammon with 2 tbsp sugar. I tossed the apples in this mixture before putting them into the 8x8, then drizzled with about 1/4 cup water. If I made this again I would probably leave out the water altogether, as it was fairly moist (but Golden Delicious tend to give off more juice than Granny Smith). I used 1/2 cup brown sugar and 1/2 white, and whisked it together with the flour. I then added the butter (cold and cubed) and cut it into the mixture with a pastry cutter until it formed typical pea-sized bits, that way the topping was more "crumbly." I baked at 375 for about 50 minutes before the topping was as crispy as I liked. This was so buttery, crispy and fast to put together. Would be delicious with a scoop of vanilla ice cream! It is a tastier, easier version of apple pie! Can't wait to make it again!

Scones

These are definitely some amazing scones! They have an incredibly light and fluffy, almost biscuit-like texture, with the sweet buttery taste of shortbread. I cubed the butter and then used a pastry cutter to cut it into the dry ingredients till it made "pea-shaped" crumbs, per usual. Followed the advice to put the egg into a measuring cup and then add milk to the 1 cup line. I used milk (not the cream that other reviewers suggested) and thought the consistency was perfectly fine. I split the dough into two halves, adding 1/2 cup dried cranberries to one half and 1/2 cup chocolate chips to the other, then stirred these ingredients into the dough. Turned each half out onto a generously floured surface, sprinkled the ball of dough with flour and patted it down into a circle 1/2 inch thick. I did not knead the dough and did not find it necessary, because I am 100% satisfied with texture of the finished product. Each half made 8 scones. As I always do with scones, I brushed the tops with eggwhites and sprinkled with cinnamon sugar mixture before putting them in the oven -- it's a delicious final touch!

Delicious Ham and Potato Soup

This is SUCH a delicious soup, though I made some changes to personal preference. I diced up a few cloves of garlic and sauteed them with the onion and celery until just softened. Instead of water and bouillon, I used two 14.5 oz cans chicken broth, which I added with the potatoes to the onion/celery/garlic. Before serving, I mashed the potatoes - this made the soup amazingly creamy. I omitted the ham and instead added cooked, crumbled bacon to the soup at the last moment. Served this with a sprinkling of grated cheddar and chopped green onions and it was great!

Roasted Red Pepper Soup

This was fabulous. It should be modified into a pasta sauce it is sooo good. I used the Italian herb mixture as well as just a tad of cream, not too much. I took the hint from the other cooks. I also omitted the mushrooms simply because I am not crazy about them. This was great with grilled cheese sandwiches or even tuna sandwiches which is what ended up happening for the next two days. I am eating the rest now and cannot believe how good this is! Not to mention easy to make.

Peanut Butter Cupcakes

These were tasty. They did not rise for me and looked flat. The bottoms of my cupcake liners did look greasy. The taste however was really good and it was simple to make. Maybe I will use baking powder next time?

Lasagna Stuffed Shells

This was a good dish but I made some changes. I added my jar sauce as well as a small can of tomato sauce. I added carrots and fresh garlic, minced. The shells were filled with the cottage cheese, eggs and parm as directed but I did not like it as much. I used cottage cheese for the mostacciolli bake and that turned out well. I think the next time I make it will be with ricotta cheese instead. Other than that it was a tasty pasta dish. A decent variation of lasagna.

Shrimp Tempura

Wow, wow, and wow. Did I say wow. This recipe I tried for mothers day and my father actually ate up most of the shrimp. This tasted like the tempura at any restaurant. It was an excellent batter. I soaked the shrimp as directed. I also made two bowls of the batter so I used one to dip sweet potatoes and onions in. Wow again. It was fantastic. This one is a keeper.

Dark Molten Chocolate Cakes

I subbed 6 tablespoons of sugar + 6 oz unsweetened chocolate for the bittersweet. My cakes came out molten in the center. Make sure to butter & sugar the ramekins beforehand - easier for the cakes to slip out onto the plate. The only problem for me was that the part that cooked all the way was more brownie and fudgy-like than cake-like. Maybe I'll look for another recipe for that texture.
