OMG. That was so good. I was surprised at how easy it was too. I was practically licking my bowl clean. I stir fryed the onions and fresh garlic to release their flavors before adding to the boiled soup. Garnished with avocado and Lime-flavored Tostitos==Absolute heaven. And still healthy, low fat. Just vegetables and tomato broth basically. It even tastes good without the chicken to make a stricter diet.
Also took a big tortilla, did a quick deep fry and placed it at the bottome of the soup bowl before ladling the soup over it. Very pretty
