Chocolate Banana Bread

Delicious! I left out the chocolate chips and doubled the cocoa powder. Mine turned out very chocolatey with a beautiful texture. I made this yesterday afternoon and right now I'm waiting for the coffee to brew so I can have this for breakfast :)

No Bake Cookies III

These turned out good. I followed KIRVIN's advice for cooking them in the microwave and it worked fine. The only other thing I did differently was that I poured the whole thing in a 9x13 pan and cut them into squares when cooled. Fast and easy and I didn't have to heat up my house :)

Portobello Mushroom Stroganoff

Mmmm, great idea in theory. If everyone rated the recipe as written, I don't think it'd have 4 stars. Is sounds funny to say that Stroganoff has too much sour cream flavor, but this one does! For me & my fiance, this was one of those meals where your first couple bites are delicious, but then you're already sick of it. If I chose to give vegetarian Stroganoff another chance, I will try one of the beef stroganoff recipes on this site and leave out the meat.

Tuna Piccata Pasta Salad

This was really good...the only changes I made were that I used only about 1/2 of the oil, I added 1 teaspoon of garlic, used a 13 oz can of chicken because I was out of tuna, and I added about 1/2 of a can of great northern beans. I know it sounds like a lot of changes, but not really. I will definitely be trying this with the tuna as stated :) A quick,easy, and cheap meal.

Red Velvet Cake

This cake is decent, but not amazing. It is definitely dry, perhaps if I try this again I will add a package of chocolate pudding. I would've given it four stars for taste alone, but the frosting killed it. It tastes like flour, and it comes out really yellow in color. The texture is also wrong. I would definitely use a whipped cream frosting, or cream cheese. I know it's not "traditional", but the cake really needs something other than what it calls for.

Easy Batter Fruit Cobbler

I made this with 2 heaping cups of nectarines and baked it in a 7" square Corning Ware casserole for 55 minutes. Yummy! It had a very dense, chewy, interestingly delicious "doughy" bottom and center. However, I could see why someone described it as "soggy". My husband exclaimed "Wow, what a great tasting dough!" The top edges had a crisp, buttery crunch. There is something almost strangely addicting about it. This would have more crisp top if baked in a larger, flatter dish.

Grilled Mustard Potato Salad

This recipe is a little too oily and the vinegar is over powering. I doctored the sauce by adding a pinch of sugar and adding more potatoes. This was good for a vegan dish, but not great.

Clark Gable Pancakes

This is a perfect, easy pancake recipe. It's fast, they're completely fluffy, and they melt in your mouth! Thanks for such a simple recipe. Please note that the amount of baking powder is correct. There was no bitterness due to the amount suggested, so I say go for it- these pancakes fluffed up like none I'd ever seen!

My Crab Cakes

I'd like to give these 5 stars for flavor and 3 stars for texture. I will absolutely use this recipe again because the spices were excellent with the dippin' sauce everyone's talking about. However, there wasn't enough crab and there was way too much cracker filling. I'd double or triple the amount of crab and use perhaps 1/3 to 1/4 of the cracker crumbs. I used a can of Trader Joe's crab and I highly recommend it. It had nice chunks of meat - not stringy stuff like some canned crab brands.

Mock Strawberry Jam

I didn't care for this. I love the idea - I was so facinated with this recipe I had to try it. Unfortunately, it did not turn out well for me. The end result was an overly sweet jar of stringy, googy, sticky Jello flavored jelly. I thought the zucchini would break down but it was still very much intact. I think the other reviewer who cooked and blended her zucchini had the right idea. Knowing that, I still wouldn't make this again because I didn't enjoy the flavor of Jello as jelly.

Refreshing Watermelon Salad

I tought this was good. The watermelon I had wasn't that great, a little soft. So I'm sure if I had a better watermelon it would've been much better. Still was good though. I used some fresh basil instead of cilantro because thats what I had and I'm not a huge an of cilantro.

This. Was. AWESOME!!! Super easy and super good. Only change I made was that I added a couple of glugs of white wine. Also, I didnt flip it at all and only had to cook mine for about 20 minutes. Super good over some angel hair pasta. Yum!!
