Marinade for Chicken

Reviewed: Jul. 12, 2008
I made the chicken on kabobs with lots of fresh veggies & everyone really liked them. The chicken seemed to be much more tender than I expected. Next time I'll marinate longer, for more flavor. We loved the flavor!

Marinated Grilled Shrimp

Reviewed: Jul. 12, 2008
My dinner tasted exactly like a dish that I eat (every time) when I visit my favorite Italian restaurant! My guests couldn't get enough of it and I found myself craving it the rest of the evening! I'll definitely make it again since I'll probably dream about it every night until I have it again. -It's THAT good!

Baked Pork Chops I

Reviewed: Jul. 11, 2008
I made this to use up a pork tenderloin I had sitting around. I did reduce the cookign time only slightly, but I was amazed at the wonderful texture and flavor of this recipe. I used cream of chicken soup instead, and made this again using chicken instead of pork. The sauce is absolutely fantastic, and SO easy! Thank you!

This was very good. I used 2 cans of Rotel instead of salsa (I was out) and added black beans and a can of chili beans. I also added some chicken broth to dilute it a bit. Very delicious.

Seven Layer Tortilla Pie

Reviewed: Jan. 29, 2008
This is a tasty and incredibly quick and easy recipe to make. It was especially tasty because we added avocados and low fat sour cream upon serving. Since the fat-free tortillas I use are about 9-inches in diameter, there were only enough beans for five layers. I omitted the cilantro because we didn't have it on hand and I didn't think my bf would it (even though I love it). I didn't mash the beans until smooth because I thought a rough-mash texture would hold up the layers better. When slicing the pie, the layers held their shape, making for a nice presentation. This recipe is a real success for me because I got my bf to try black beans and now he asks for this dish all of the time!

Super-Delicious Zuppa Toscana

Love this soup! I actually use 2 lbs of hot italian sausage and cut my potatoes into cubes. They don't get mushy that way. I cut back on the cream to approximately 1/2 cup. Just the best!!

New England Bean Dip

Reviewed: Nov. 22, 2007
I would almost give it 5, the appearance intially was a bit strange to me...but I ended up mixing it in a blender and it looked much better. I also like the taste better letting it sit overnight in the fridge. Also I thought there was a little too much mayo I ended up adding more beans to the mix to make it thicker. Some of that might be personal preference. More horseradish too! I am from New England and had not had this in years so thanks for the recipe!
