Fresh Tomato Sauce

I make this with changes...Not so much olive oil, 1/4 cup of tomato paste, to thicken.. 3 cloves garlic, 1 cup finely chopped onion, 1 cup of the frozen trio pepper mix from Trader Joe's, then italian spices...also chiffonade some fresh basil & add freshly grated parm cheese to top.

Sweet, Sticky and Spicy Chicken

Mexican Fire Rice

I used chicken broth instead of water to cook the rice and used 1/2 regular and 1/2 spicy breakfast sausage. I think next time I will use all spicy sausage to kick it up a notch. Overall, this was very good and liked by all.

Tater Tot Taco Salad

SO GOOD!!! I layered it... 9x13 baking dish A way to take it to a potluck....=D Crispy t tots on bottom meat next a thin layer of refried beans next shredded cheese (it will melt if all is hot or you could pop it in the oven at this point) Have your salad bar toppings ready spoon out meat layers & then top with tomatoes, shred lettuce, shredded cheese, olives,onions... whatever you love Next salsa or ranch or your fav dressing I top that with fresh cilantro. Everyone will want this recipe...

Delicious Ham and Potato Soup

I used all chicken broth instead of water and sauteed garlic, onion and celery in EVOO. It was very good but was a little bland for me. Next time may experiment with additional spices or add hot italian sausage instead of ham.

High Temperature Eye-of-Round Roast

I have had to teach myself to cook over the years and have never attempted to do a roast until yesterday. It was so good and I am very proud of myself. It was so easy, especially if you have to run out (like I did) becasue you shut the oven off and you can leave! Perfect and yummy. I did cook it longer per pound (about 9 min per pound) as none of us are real rare meat people.

Harvest Pumpkin Soup

Love this pumpkin soup & have made it several times, changing it every time. I have used pumpkin in the can, in addition, have put in 2 pre-cooked skinned yams. I have sauteed fresh baby carrots & they gave the soup a zing. Yummy! Tonight for my community cooking club, I am going to try the spicy approach with the hot pepper flakes, topped with the sour creme dollop, some mint (for show) & a sprinkle of paprika for color.

Pumpkin Cake II

My daughter & I made this the other day on the spur of the moment. We only had 1/2 box of yellow cake mix. I used 1/4 cup of Pumpkin Butter from Wm Sonoma. Used the whole can of pumpkin & also used a smaller amount of brown sugar. Baked 45 mins in Bundt pan. No frosting. Her husband LOVED this. I had it for breakfast & put it in the microwave for 15 sec & slathered it with butter. YUMMMM

Fruit Cocktail Salad

The key to this salad is DRAINING the fruit overnight. I even kept it in the fridge w/o a covering. I just used 2 lg cans of fruit cocktail & 1 reg can of cut pineapple. I cup of sour creme & I added mini marshmellows to the top & it was scarfed up!!! Loved it.

Turkey Gumbo

I am pretty sure that the oil measurement is wrong as well as the flour one. I made a roux tonight to add turkey stock to & all it took was 1 stick of butter & about 3 tablespoons of flour. I added about 6 cups of turkey stock, a little at a time, & ended up with about 5 cups of yummy gravy. I also added chic granules for clout & kitchen bouquet. have to be careful with KB as it is potent. My Grandmother used it. It is in all grocery stores. <;-)
