Insanely Amazing Jalapeno Cheese Dip

This really was amazing! It was the hit of the party! I used 1/2 sour cream and 1/2 mayo and baked in a glass dish. Everyone wanted the recipe and insists I bring it for Christmas. Thank you HappyWife for the great recipe!

Salmon Pasta Pomodoro

Good basic recipe. Chopped tomatoes good, but not enough accent. Would suggest either an addition of tomato sauce. or a 1/2 cup of Marinara. Salmon prep is right on , although I used a dash of white wine and lemon pepper while steaming. I also used mini farfalle (new to me) as the pasta and found it a great size for this dish.

World's Best Lasagna

Texas Black Bean Soup

This was very good! I sauteed onion and garlic in EVOO and added hot italian sausage. Also added an extra can of black beans. I love spicy, so I subbed one can of jalapenos for the diced chiles. Will make again..

I also used chicken here instead, and Jumbo shells at the suggestion of others here. It was a little too much broccoli for my husbands taste, I reduced the red sauce a little, but didn't really need to since it's poured over top anyway.

Coq au Vin

I made a rendition of this tonight. I looked it up to see what herbs went in. I browned white chicken tenders in butter/oliver oil. I coated them with herbs, parsley, rosemary,thyme all dried. I took them out after browning & put 1 carton of sliced mushrooms in & browned them. I took them out & added more herbs, a little butter,some garlic and 1 cup red wine. I let that simmer,added thickner. (flour & water) & added the cooked mushrooms The finally added the cooked chicken. It was awesome ( no veggies)

Low-Fat Blueberry Bran Muffins

I was looking for a recipe to use my leftover - getting a little too old for salad - blueberries, and this was perfect! I didn't have wheat bran, but I used FiberOne cereal instead and it worked great. I put a few too many blueberries in, and since they were fresh the muffins became a little hard to handle (also put them in paper wrappers which didn't help), but still delicious!

Monterey Chicken Fajitas

I made this for my teenager & she loved it. I did omit the soup, like others. I added Roasted Garlic Salsa from Trader Joes at the end of the cooking process & it kinda carmelized which made it smokey & delish. I added the black beans after with a sprinkling of shredded cheese mmmm Karen

Chicken with Lemon-Caper Sauce

WAY too much lemon! I made it twice today. First batch I saw the amtlemon juice and halved to 1/8. Still too much.I corrected that with wine & broth. the 2nd batch I halved it again & it was better BUT I will put less in next time as when it cooks down, it gets way too concentrated.. Other than that it was awesome, tender & everyone loved it.
