Buttermilk Pie IV

Wow, this is very good. I used 1 cup sugar and 1 cup Splenda and it's very very sweet. I may cut back the margarine next time to about 1/2 a stick instead of a full stick and I did use fat-free buttermilk. The pie is very rich and yummy. Thanks for a great recipe!

Waikiki Meatballs

This was surprisingly easy and delicious! I only used 1 lb of very lean hamburger and ommited the ginger (we both hate the taste of ginger). I used a 20oz can of chunk pineapple and added broccoli, green, red & yellow bell peppers and also some green onions to the saute after the meatballs were done. The sauce was devine just as written and I wouldn't change one thing about it. I thought it would need more soy sauce but this was the perfect amount. You won't be disappointed if you are looking for a good sweet & sour recipe. I think this would be good with sauted chicken breasts also. Thanks so much for a great recipe!

Slow Cooker Turkey Breast

Very nice and juicy. Made a 6 lb breast in about 6 hours, first 2 hours on hi, then on low for the last 4. Very moist. I liked the texture and flavor. Some of the drippings went into the gravy and it made it very yummy.

Eggplant Parmesan II

Hubby gave it 3 stars, I gave it 5 so here it is a 4 rating. I baked the slices at 450 after I'd sweated them using Egg Beaters for the eggs and reduced fat cheeses. I thought it made a great meal but hubby thought it needed some meat and it would be better as a sidedish.

The Best Garlic Bread

Steak with Marsala Sauce

I thought this was excellent with my grilled tenderloins. I didn't have any mushrooms so I just left those out and I added a bit more marsala since it reduced to almost nothing. The flavor was fantastic and I poured some of it over my baked potato too. Great, guilt free sauce since no butter is used.

Super Bowl Bread Bowls

I only used the bread bowl part of this recipe to serve Cindy's Awesome Clam Chowder in. It was fantastic!! and so easy. I halved the recipe and it made 3 nice "bowls". The texture was quite nice for the top and the scooped out bread so I broiled the pieces with a bit of low fat butter. YUMMM.. I will be making these quite often. I think they would be great for artichoke dip or creamy shrimp dip. Thank you Darlene for a wonderful, easy recipe.

Pumpkin Coffee Cake ~~ Very Low Fat

Country Fried Steak and Milk Gravy

This method was perfect and my steaks turned out tender and crunchy at the same time! Perfect in my book. The gravy was good too and I used non-fat milk. I did use a lot less lard than called for but the flavor was still great. Thanks for the great recipe Likestocook.

Low-Fat Corn Bread

Pretty tasty. I was doing a test drive for Thanksgiving cornbread dressing so next time I will definately add more salt. At least a teaspoon. The texture was just right and pretty guilt free since I used egg substitute.

Omelet Biscuit Cups

Very tasty! I used the cheap brand of biscuits and used 2 per each of my jumbo muffin cups. I used egg beaters and non-fat milk, 40% reduced fat bacon and fat-free cheddar cheese. No mushrooms and no butter was used. Very yummy and my picky husband even liked them. Fun treat for breakfast.

Amber's Sesame Chicken

I liked the method of cooking this but the sauce was way too strong for us. I did double the sauce but it wasn't the doubling that caused it to be too strong, I think it's just the teriyaki & honey in equal amounts. My hubby said to take this out of our menu.. not to his liking.

Crustless Pumpkin Pie

This is much too light textured for us. I guess we like the more traditional pumpkin pie. I did lighten it up by using splenda and egg beaters in place of the sugar and eggs. Health wise, it's fantastic but the texture just wasn't for us. I'd also use quite a bit more spice next time.

Hard Rock Candy

The flavor is fantastic but I boiled it until it reached 310 and it still did not get hard enough to crack. I spent literally an hour to cut it up with a sharp knife and put it into a baggie with sugar to keep it from sticking when I put it in the air tight container. Like I said, the flavor was perfect and I halved the recipe. Used the 1 dram bottle of cinnamon oil I found at Hobby Lobby. I'd like to try some other flavors but will have to let boil to about 320 next time.
