Cake Balls

Very good, but VERY time consuming. Also, make your balls truly bite size, better for the eating. And DON'T try to dip them in just regular melted chocolate (I ran out of the coating) That is a big mistake.

Clone of a Cinnabon

I made these for mother's day brunch and they are SSSSSOOOOOOOOO GOOD!! I only made one change to the bun itself: I mixed the sugar, cinnamon, and butter together and spread it on, instead of spreading the butter and sprinkling the others. It was SO much easier and more uniform. With the frosting, I doubled it and used a whole 8oz brick of cream cheese. I didn't have a problem with the filling coming out of the buns(Maybe because I made these the night before and had them in the fridge?) So good.

Chicken and Biscuit Casserole

Very good, though it could be a little more flavorful as written. I made this once a while ago as written and it was good, just a little bland. This time I seasoned the chicken breasts with garlic powder and onion powder and then pan seared them in a little butter. I removed them from the pan and then cooked the veggies. I used frozen peas instead of canned and added corn. I also used 1 cup whole milk and 3 cups broth and sliced the chicken and added it back in. Then I used "E-Z Drop Biscuits" from this site b/c I was out of mix. The second time, with my changes, was a five star dinner; but as written I'll give it four stars.

Lemon Basil Pesto Flat Iron Steak

This steak was PHENOMENAL!! For Mother's Day dinner my father and I made this for my stepmom. It was absolutely delicious! The pesto was fresh and very tasty, it added a little kick to the steak without compromising the flavor. We didn't change one thing for this steak, we followed the recipe exactly and the finished product was terrific. I recommend this to any cook, because it was easy for me to make and I am definitely just an amateur chef.

Fish Tacos

The stars are for the beer batter fried fish which was really good - the kids ate it up - and would be a good mix for fish and chips. For that alone I would have given 4-5 stars. I did not like the sauce, however. It was too tangy with yogurt AND lime. I can see how sour cream might have been better. I will be making the fish again - as it is way cheaper than the frozen beer battered fish. I used tilapia because I had frozen fillets on hand.

Waffles II

I made this as written, the only difference is that I used 2:1 ratio of wheat flour to white flour. This is a good waffle for someone who wants to top it with fruit or syrup. Personally, I like my waffles to stand alone and eat them toasted with a little butter. I will fiddle with this one-it's a good base. The batter is thick enough to hold something (I'm thinking chocolate chips or blueberries) and it's easy to pour into the waffle iron and it cooks in only 2 minutes while others I have tried can take up to 5! I scaled the recipe to 12 and got 14 8in round waffles. They are very filling (maybe becuase I used wheat flour?) and we have plenty left to freeze and eat this week before school for breakfast or as an after school snack. Thanks Razz!

Almost No Fat Banana Bread

For a almost no fat banana bread this was VERY good. I lessen the sugar to 1/2 cup, increased cinnamon to 1 1/2 t. and added some vanilla. I made into 12 muffins instead, and it took 20 min. to cook. I will definitly make again. A great way to use up over ripe bananas and have a healthy snack!

Enchilada Sauce

I tripled the recipe and will be freezing half of it tonight. The nice thing about this recipe is that you can adjust the chilie peppers to your taste and play with new varieties. My family has a long tradition of using chilie peppers. I learned it from my grandmother. Its really not as much work as this recipe says. Clean the outside of your chilie with a paper towel. Open the chilies and take out the stem and seeds. Over a hot, dry skillet (not in the oven), throw in the cleaned chilies. Heat inside and outside until it starts to get soft. You are just doing this to heat up the oils. There should be no smoking and you aren't really looking for a change of color. Once they are done, throw them in a pot of simmering water. Once the chilies are in, turn the pot off and let rest for 20-30 minutes. Save the water! After all that, I throw it in the blender and puree it. Add some of the water if needed to the blender. I like big chunks of garlic in my enchilada sauce, so I just pureed the chilies and left the stock, garlic and butter as is ( I don't use onion because I don't like them). It's much faster this way and still as tasty. Good luck!

Special Lemonade

Very, very good! I took a short cut, instead of cutting away the membrane and adding the pulp, I just added some extra lemon juice. A little on the sweet side, so I will add less sugar next time. I will be making this all summer long :) Thanks for the great recipe Erin!

Pork Dumplings

Wow I tripled this recipe and had no Idea what I was in for. This would have easily made over 300 wontons. However I gave up after 220 and just made meatballs after that. I threw some in with the fried rice I had. Next time I will cut back on the sesame, it was a little strong even though it was tasty. I might throw in some sort of other veggie in it next time, I think it just needs a little more than the meat.

Banana Crumb Muffins

I accidently doubled the crumb topping and that was good. Unfortunately, I added the topping at the very beginning and it just melted to the pan. INext time I will wait for the last 5 mintues of cooking before putting the topping on. added my usual clove, cinnamon and nutmeg to the batter. I also used apple sauce instead of butter/oil in the batter.
