Cream Cheese Squares

Reviewed: Sep. 14, 2009
These were confusing to me. Tasted more like a breakfast item or something but was too sweet. I didn't care much for the grainy texture on top from the sugar. Might try it again and add some flour and nuts to the topping. Serve it with some fruit on top as a breakfast pastry type item??? I was on the fence with this one.

Molten Chocolate Cakes With Sugar-Coated Raspberries

OMG, so good they are evil! I cooked mine in brule cups. Don't have giant muffin tins. I brushed each one with butter and rolled some sugar around in them. Made a nice carmelized crunchiness. Not sure if that is a word.Dang these were just sinful.

To Die For Blueberry Muffins

Reviewed: Sep. 8, 2009
These muffins have great flavor. The only thing I did not enjoy with this recipe was that the oil seemed to puddle at the bottom of the muffins. Kind of grossed me out but the taste was super good. I made these a second time and reduced the vegtable oil to 1/4 cup and the greasy bottoms were gone. The muffins also baked up nicer and were not flat looking.I also reduced the amount of flour (2 TBSP)in the crumb topping and replaced it with oatmeal. I think the next time I will also reduced the sugar in the muffins as well like others have suggested. They are a little too sweet. Without any changes these muffins are great. I just like to tweak things to make them a little more calorie and health friendly.

I didn't use a bread bowl, just make sure to drain the liquid from peppers if not using a bread bowl. I used asiago cheese instead of parm more flavor and medium cheddar, next time I'll use 1 cup of chedddar. I also added 1/2 tsp of garlic powder. Very good! I'll make this often, thanks Happywife!!! ♥

We loved this dish. I also cooked the vegies first. It is very important not to over cook the scallops. They only need to be seared 3 to 4 minutes. Lovely flavors in he recipe. Thanks so much for sharing.

Chicken with Chipotle

Reviewed: Aug. 27, 2009
I had a 1/2 can of chiptole peppers left over from a salsa my husband made. I found this recipe to use it up. It was very easy and very good. I used BLSL Chick. breasts and cooked in pan with olive oil and some garlic. Then added the sauce to pan to cook with chicken. I did thicken up the sauce a bit. I served with mexican rice and beans. Will definitly make again. It had the right amount of 'kick' to it. We like things spicy.

Artichoke Chicken

Reviewed: Aug. 21, 2009
Really good. My substitutions: I made mine with non fat plain yogurt instead of mayo to cut the calories. I added 3 cloves of fresh garlic to the artichoke mixture and I also used marinated artichoke hearts that I squeezed completely dry so that there was no extra liquid in the pan. I pan seared my chicken first with salt, pepper and garlic powder and then topped with artichoke mixture to bake. Looked pretty and tasted great. I will be putting it in our regular rotation.

Blueberry Zucchini Bread

Reviewed: Aug. 21, 2009
after reading other reviews, I decreased the sugar by 1/4 cup and I also added only 2 tsp of cinnamon and 1/4 allspice. 1/2 cup oil and 1/2 buttermilk and OMG!!! This was absolutely to die for! I made another version after awapping out the zucchini with 4 ripe bananas and putting on a pecan strusel topping. Thanks for a great recipe! I would give this more stars if I could.

Quick and Easy Chicken Noodle Soup

Reviewed: Aug. 20, 2009
I made this for my sick husband tonight and he loved it. He said it was the best chicken noodle soup he's ever had. I made a few changes by using a rotisserie chicken (white meat only), using chicken bouillon cubes mixed with water instead of chicken broth, sauteed the carrots with the celery and onion and added about 4 cloves of garlic. I also increased the spices. Fabulous - can't wait to make it again!

Hi! I am the submitter of this recipe and when you simmer the heavy cream and sugar, make sure you see tiny bubbles around the edge of the pot. Oh, and you can stir the frosting in the refrigerator often, it doesn't have to be every few minutes. Enjoy ♥

President Ford's Braised Eye Round Steak

Very good, simple and delicious. Be sure to simmer it low and for a long time or it might end up tough....mine was O.K...but could have been more tender if I had let it go longer than the recipe instructs. I am thinking about trying it in the crockpot next time.

Easy OREO Truffles

Reviewed: Aug. 9, 2009
REALLY GOOD. I followed the directions exactly and refrigerated them overnight before dipping them in chocolate. I found that resting them on the edge of a fork and spooning the chocolate over the truffle worked best. I brought them to a bridal shower and they were gone in 5 minutes.

Quick and Easy Green Chile Chicken Enchilada Casserole

Reviewed: Aug. 6, 2009
YUM!! I put my chicken in the crock-pot this morning with water, some chicken bouillon cubes, big chunks of onion, whole cloves of garlic, and chunks of celery. Seasoned it with a little garlic salt, rosemary and black peppercorns. Came home and shredded the chicken and diced up some of the onion and mixed it with a little more seasoning. I did char the tortillas, and I didn't have any sour cream so I used some non fat plain yogurt, which worked well. It was REALLY good and looked so great. Give this recipe a try, you won't be disappointed!!
