Taco Salad I

I seriously think the facts of this recipe are terrible. I'm sorry but ommitting certain items constitutes an entirely different recipe. When you make this recipe exactly as it is, it turns out quite terrible and extremely fattening as it is difficult to find a low fat French dressing.

Sweet and Spicy Slow Cooker Beans and Ribs

Easy Marinated Vegetables

Thank you! Finally a way for me to eat brocolli and cauliflower without having to cover it in cheese to enjoy it. I made 2 different batches, 1 with italian dressing and another with an asian ginger dressing. Both were superb. I will be making this often and experimenting with different dressings.

Lemon Horseradish New Potatoes

After reading reviews, I double the amount of lemon and horseradish and I also subbed olive oil for the butter. I cut the potatoes into halves and quarters to speed the cooking. The flavor was wonderful, not overpowering at all. In fact, I think next time I will probably add even more horseradish.

Lemon Carrots and Rutabaga

Ok, this recipe sounds weird but trust me, the taste is anything but! The flavor is very light and delicate, not overly lemony. I'd never had rutabegas before, but they were really good! I've been trying to find ways to add more vegetables to our diet, and this recipe is going to become a staple. It's easy to make, a gorgeous looking dish, tastes fantastic and is healthy. What's not to love?

Homesteader Cornbread

I just tried this cornbread last night and was slightly disappointed. It looked beautiful, cut well and was neither too dry nor too moist, BUT it didn't really have a lot of corn flavor to me. It was good, but not great. I do think that this would be an excellent cornbread to serve to people who are new to cornbread, as it does have a very nice texture, and the milder corn flavor would appeal.

Chicago Dip

Made it exactly as specified, except for the spices, since I didn't have "seasoning salt" so I winged it. It turned out excellent! I served as an appetizer at a small dinner party I hosted and people were saying how good it was and asking how to make it. So easy, looks very pretty in the bread bowl and delicious. Thanks!

Butternut Squash Soup II

I read many of the reviews, so I made sure to have sour cream on hand, just in case. I made the recipe as specified and it was, as others found, very bland. I added a 1/8 tsp of cayenne, a 1/2 tsp of cinnamon, 2 tbsp brown sugar and 1/2 cup of sour cream and that dressed it right up. Sweet and spicy, but the squash flavor wasn't masked at all. Good recipe if you tinker with it.

Slow Cooker Stuffing

Excellent! I used all fresh herbes (doubled) and this stuffing is the best one I've made yet. My husband loves it too, and wanted to eat the whole bowl of it. I added dried cranberries and cooked wild rice to the recipe to give it a little something different. I liked the additions, but this stuffing would be great as-is. Thanks for the recipe!

Spicy Sweet Potatoes

I thought this was very good; the combo of slightly spicy with slightly sweet was great. It seems like it could do with a little something else though. Maybe a little carmelized onion? Or a little sticky-sweet, like honey or maple syrup? Still, it's very tasty and I will definitely make this again. I'd like to see what other people come up with as far as customizing this recipe.

Dijon-Tarragon Cream Chicken

I've made this dish twice now and love it. The first time I made it exactly as the recipe stated. It was very tasty and didn't seem too mustardy to me at all. The second time I decided to experiment. I wanted to cut back on some of the fat, so instead of heavy cream I used 2% evaporated milk. I wasn't sure how this was going to turn out, but it actually turned out great! I used boneless, skinless chicken thighs instead of breasts, as I really don't care for white meat. My fiancee is normally pretty against anything in which I use a lowfat version of ingredients but he said this is probably the best thing I've ever cooked. I will make it with low fat evaporated milk from now on, since we both loved it and it's a bit healthier this way.

Tomato Basil Fettuccine

I made this tonight and it was just wonderful! I took a gamble and doubled the recipe, because I wanted something to bring to work this week. The sauce was creamy, just the right amount of red pepper (though people who like stuff spicey might want to add just a bit more. I could taste it, but it didn't burn.) The only thing I will do differently next time is to add more fresh basil. I LOVE the taste of fresh basil and thought it could have used a bit more. Great recipe, and this is one I'm going to make often. It's easy, reasonably healthy and it's impressive tasting enough for company. I thought it tasted as good as something you'd get in a restaurant.

Awesome Sausage, Apple and Cranberry Stuffing

Absolutely awesome stuffing! I've been trying for a while now to make a good homemade stuffing and never suceeded until I tried this recipe. I followed some user recommendations, such as adding extra broth when cooking OUT of the turkey, I used plain breakfast sausage (long story) and had to sub dried currants for the cranberries since the store was completely out of cranberries. It turned out delicious and is going to be the first of the Thanksgiving leftovers to be finished. I am actually going to make a 2nd batch. :) Oh, and I used sourdough bread, which was great!

Sweet Potato Pie II

I'm not sure what I did wrong, but I ended up with enough for a pie and a half, but I'm sure it was my error somehow. At any rate, I had lots of mashed sweet potatoes left over, so what I did was fill up one pie crust with the regular pie filling, then poured the rest into the 2nd pie crust and it only filled up halfway. I added more of the mashed sweet potatoes and mixed them in, to fill up the 2nd pie crust. I did have to bake them about 10 minutes longer than stated, but that could just be my oven. Anyway, I really liked both pies, but I actually liked the pie with the extra sweet potatoes in it better! I think that in the future, I will add another cup/cup and a half of sweet potatoes to the recipe and bake 2 pies with a thicker filling. I also cheated and used pumpkin pie spice, rather than individual amounts of cinnamon, nutmeg and ginger. Either way, both pies were very tasty and I will be making this every holiday season.

White Chocolate Raspberry Cheesecake

This is one excellent and rich cheesecake. Everybody and I mean everybody loved this cheesecake. Next time, I will double the crust and sauce. It helps to have a great strainer to get rid of the small seeds. Be sure to taste the sauce and add sugar accordinigly. It is very easy to over sweeten it and mess it up. Use the waterbath for baking the cheesecake and definitley undercook it alittle (slightly undone/wobbly in the center of cake) in the oven. Let it chill in the refrigerator and it should come out perfect.

Coconut Shrimp I

Great recipe and taste! It does take quite a bit of work and preparation, but well worth the work. I should have made more, because they were eaten so fast. For the sauce, I used a different marmalade recipe though. Look for the twice cooked coconut shrimp recipe on this website and use that sauce recipe. Trust me, you won't be disappointed. By the way, definitely refrigerate your shrimp after adding the batter. It helps the batter stick to the shrimp, so it won't come off during frying.
