Easy Lemon Cookies

I really liked these cookies. This easy recipe saved me when I had to make cookies for son's school the next day. Quick and inexpensive!

Chicken Chimichangas

Very easy. Rice was a little bland so I added salt. Used rotisserie chicken and black beans. Also added sauteed onions, green peppers and cilantro. Brushed with canola oil and baked in the oven at 400 degrees for 20 min. as others suggested. Family loved them.

Pumpkin Pancakes

Best pancakes I've ever made. I used 2 teaspoons of pumpkin pie spice instead of the allspice and ginger. Delicious!
