Chewy Cocoa Brownies

Reviewed: Dec. 7, 2009
Okay, so I officially love Toll House recipes. These came out so awesome!! Rich, decadent, chewy and moist, just like a brownie should be! I added about a cup of white chocolate chips. Killer

Apple Cranberry Bread

Reviewed: Dec. 6, 2009
Thank you to all the others who have warned that this bread mixes up into a very thick batter; I knew to expect that and enlisted my trusty KitchenAid mixer, which was powerful enough to do the job. The only change I made was to use white whole wheat flour, and the bread was done in only 53 minutes. It tasted pretty good, but is not really sweet like some quick breads are,so some cooks may want to adjust the amount of sugar. It did disappear pretty quickly when I served it at church this morning, though!

Banana Banana Bread

Reviewed: Dec. 5, 2009
3 keys to this recipe: 1 - make sure you have all the banana it calls for. 2 - when you get to the part where it says "stir just to moisten" HEED that advice and 3 - do not over cook. My family LOVED this banana bread.

Crustless Pumpkin Pie

Reviewed: Dec. 2, 2009
Want to be the envy of your friends and family - this crustless pumpkin pie will do it. The first bite you take is pure bliss...and you'll want more. I have made this my dessert for Thanksgiving, heck even the fall. If you want to lower the calories a bit - swap the following ingredients - lour with Wheat Flour, evaporated milk with lowfat/fat free evaporated milk

BBQ Pork for Sandwiches

Reviewed: Dec. 1, 2009
OMG this was so good. I used boneless pork shoulder. I added 3 cans of the beef broth. I wanted the broth to cover most of the meat. When it was time to take it out the meat just fell apart! I didn't do step 2 and 3. I used Sweet Baby Ray's BBQ sauce like others said and it was just right! Will be making this again!!!

Spicy Pumpkin Pie II

Reviewed: Dec. 1, 2009
Delicious and perfectly spiced. I used 2c of evaperated milk instead of the milk and cream, which was slightly more than 1 can. Worked out fine but was a bit creamy for me. Next time I will use 1 can. Taste was perfect!

Chocolate Pecan Pie III

Reviewed: Dec. 1, 2009
Delicious and sinfuly decadent! This pie was a little slice of heaven. Chocolate is the perfect addition to pecan pie. It was rich and chocolaty but not too sweet. Perfect! I will be making this pie on holidays from now on! I did add an additional 2T of cocoa as I love chocolate, and it tasted perfect to me. Thanks Ruth!

Tasty Green Bean Casserole

Reviewed: Nov. 29, 2009
This is excellent. Enough like the original to satisfy those folks and enough different to make it interesting. I used fresh green beans, so if you like those better go for it - it turned out great. My only mistake for Thanksgiving dinner? ... I should have doubled the recipe!

Pumpkin Puree

Reviewed: Nov. 28, 2009
Used a 12-15 lb medium sized jacko-lantern pumpkin and just boiled it. Scooped out flesh and put in colander to drain and pressed down until most liquid was gone. Put into food processor and made very nice pumpkin butter and empanada filling. Put well drained pulp into freezer bags. I will not stop buying canned pumpkin but will never toss out another carving pumpkin ever again. Saves $$.

Yummy Sweet Potato Casserole

Made this the day before Thanksgiving. Substituted 1/4 cup orange juice for milk, used brown sugar instead of white in the yam mixture. YUMMY!! Husband loved it and so did I. Will definitely make every Thanksgiving from now on.

Aunt Carol's Apple Pie

Reviewed: Nov. 28, 2009
Excellent recipe for traditional apple pie. I added about 1/4 tsp. of nutmeg with the cinnamon. I added a bit less flour than called for and it was plenty - not runny at all. I got my apples at the farmers market and based on the recommendation of the apple guy found a fantastic pie apple called "Mutsu". I will definitely look for them again next time. They are big and meaty, not too sweet or too tart, just perfect and they bake up really well. I also threw in a couple Granny Smiths.

I made these for a crowd of 14 last night and they were a big hit! Who doesn't love cheese, bacon and mushrooms?! I added some garlic powder, dried parsley flakes (for color) and some bread crumbs. They were very good!

Holy cow this was delicious!! I followed the recipe exactly and wouldn't change a thing! I can see how some people said it was too salty but for me it was just fine once paired with rice and naan bread. SO GOOD!

Really tasty. I used a cornbread stuffing mix and didn't use any butter to saute veggies. Added poultry seasoning and served this with some sauted broccoli slaw, along with the cream cheese and cranberry sauce. I'll make this again

Amazingly Good Eggnog

Reviewed: Nov. 25, 2009
It really IS amazing eggnog. It tastes just like my favourite store-bought kind, if not better. No one in my family drinks alcohol, so to get the flavour I substituted 2 tsp rum extract instead of actual rum. Also, I used half a vanilla bean split lengthwise when I first made the milk-and-egg mixture to get that beautiful speckle I'm so used to. I did add 2 tsp of extract when I mixed in the cream though. Thank you for an amazing recipe! I hope this helps anyone that wants the rum flavour but doesn't want the alcohol.

Spicy Chipotle Turkey Burgers

Reviewed: Nov. 24, 2009
I am a wimp when it comes to heat, but I could not even taste the chipotle in this burger. I was hoping for some heat, but got nothing. I'll try this recipe again with 2 chipotles sometime and will adjust my review if it is better. With only one pepper, it was pretty bland

Cinnamon Candied Apples

Reviewed: Nov. 22, 2009
I have a similar recipe that I've used for years. I use 3/4 C white and 3/4 C brown sugar and an entire 9 oz pkg of red hots. This makes enough syrup to do 5 lbs of apples. The recipe calls for 3 lbs, but I have done 5 lbs. You may have to do it in 2 to 3 batches depending on the size of your pan. Start with aprox half of your apple slices and remove when tender with a slotted spoon. Place remaining apple slices into syrup and cook till tender. These are delicious! I have many requests for them at holiday time. They go great with ham, but are good with turkey as well. Enjoy!
