Do you know the way to San Jose? If you do, you’ll find a sprawling city at the southern end of the San Francisco Bay, California’s third largest. Founded in 1777 by Spanish conquistadors as a farming community to supply the Presidio in San Francisco, an agricultural center for 150 years, and dubbed the “capital of Silicon Valley in 1999, San Jose has evolved with the times. Surrounded by orange, apricot, plum, peach, and almond orchards, the city stretched out after WWII, increasing population, housing, and its tangle of freeways. The orchards became history as tract home neighborhoods exploded. Today, San Jose is a center for high tech engineering, computer and micro-processing companies with a made-over downtown core. Ethnic influences are strong on San Jose’s culinary scene, mirroring California’s immigrant history. From Mexican to Chinese, Japanese to Italian, Moroccan to Thai, and almost every country in between, there’s no lack of variety. The San Pedro Square farmers’ market is popular on Saturdays, as are Santana Row restaurants. Upscale diners flock to A.P. Stump’s for fresh, seasonal fare or Michael Mina’s Arcadia.

Baked Pork Spring Rolls

The stuffing for these is GREAT! Tastes very authentic thai. I used the spring roll wrappers that are round and must be soaked, and I wonder if that caused a bit of a problem I experienced. They didn't really crisp up as much as I had liked, and they also stuck to the pan really bad - some broke apart when I pulled them off. But the taste was magnificent, and my boyfriend devoured these. I served with bottled Peanut Chile sauce and also Sweet Chile sauce. You could make your own from this site, or buy it bottled at the store. I'll try these with egg-roll wrappers since they seem to be easier to find.

Spicy Basil Chicken

DELICIOUS! I am a huge Thai food fan because of the complex flavors Thai dishes have. This was my first try at making Thai and I must say I was really impressed! It tasted robust and flavorful, was super easy to make. The ingredients were sort of difficult to find at a smaller supermarket, but I went to Cost Plus World Market and found the chile oil, oyster sauce, etc. Worth the hunt! I love that its all made in one pan - less clean up! I served over sticky rice. The only comment is that it came out very spicy when made as directed. I personally love spiciness, so does my boyfriend, but his mom couldn't eat it due to the heat. You can omit the hot peppers or use olive oil instead of chile oil to take it down a notch. I'll make again!
