Rick's Special Buttercream Frosting

YUM!! I made eight dozen cupcakes for an opening night party for a theatre production I worked on! I made half a it yellow and the other half black. (We did The Who's Tommy) Note: If you're making black frosting with gel coloring, it will become bitter. I added two boxes of cream cheese, and it got rid of the bitter taste!

Guinness® Bread

This was a good bread, a little bitter for me. I served it to the guys at work with honey butter, and it didn't last long. I will make again without using the extra port beer.

Tofu Chocolate Pudding

This recipe MUST be done in a blender or food processor - I learned the hard way that beaters just don't cut it. Also, I added a tabelspoon each of unsweetened cocoa powder and sugar to increase the chocolate flavor.

Thanksgiving Sweet Potatoes

Thought this was way too sweet, and more like a dessert than a side dish with the crumb topping. It was very sweet and a little tangy, without any depth in flavor or spices. This would've passed more as a sweet potato pie or cobbler. It definitely needed more herbs or spices to make it a side dish. Candied yams have more depth of flavor, in my opinion, and the crumb topping just totally classified the dish as a dessert.

Holiday Cranberry Chutney

This is delicious and very easy to make. I followed the advice and decreased the sugar by 1/4 cup and used pumpkin pie spice. I also cooked it a little longer so that all the cranberries had popped. I could eat it by the spoonful!

French Toast Casserole

It was okay. My kids ate it but not sure I really liked the crunchy top with the soft bottom. I used all the liquid but only cooked 35 minutes since the custard was already set. Will probably not make again.

Creamy Potato Leek Soup II

I followed everything exactly as written with the exception that I used half and half. It was some of the best potato soup, I've ever eaten. I will be making it again and I'll use regular milk. I don't think the flavor will suffer at all by lightening up the milk. I was skeptical when I read that it only had 5 ingredients but I'm a believer now. Make this soup, you won't be sorry!

Best Brownies

Melt-in-your-mouth AMAZING! Thank you, Angie! These were incredible, and, so easy to make! We beat by hand (rather than with a beater) the chocolate mixture, which we felt would keep the texture chewy and crumbly (rather than tough). And, we didn't make the frosting. These brownies were the perfect mixture of sweet, rich, (but not too rich), and crumbly (while holding together). We made them in minutes, with minimal ingredients (but, used very good unsweetened chocolate: Ghirardelli's), and couldn't stop eating them! 10 Stars!

Pineapple Filling

Really good recipe. But I had to make it twice to get it right. I don't have a double boiler, so I put a smaller pot in a larger pot. The first time, it never got thick enough. Frustrated, I put the mix in the fridge and thought I could just use it as a topping for ice cream. The next day, I tried it again. This time it took FOREVER, but it eventually thickened up. I realized that the first batch never thickened up because the pot never got hot enough. So, I grabbed the previous batch from the fridge and put it in a pot directly on the burner on low. And it actually thickened up quickly! The end result is a wonderful filling. Thanks again for the recipe.

Spicy Rapid Roast Chicken

Did not cook in the hour the recipe claims. It took more than twice as long, and it was an average-sized Foster Farms chicken. It ended up flavorless and my home reeks of smoky-burnt-chicken-smell even several hours later.

Chicken with Cranberries

This was super tasty! I was worried about adding the chicken into the "cranberry sauce" becuase at the 5 min mark it still looked more like water and cranberries, so we let it cook uncovered for a few more minutes and it definitely started to thicken up. Then we followed the recipe again from there. We also amazingly enough did not have flour and so we used bread crumbs instead, worked fine for us!

Peruvian Lomo Saltado

Wow, this was absolutely delicious! Imperative that the meat is marinated in the vinegar/soy sauce for at least a half an hour. Like others, I added cumin, garlic and subbed cilantro for the parsley. I used Ore Ida steak fries to much success! I did turn up the heat to almost a broil for an extra 4 minutes at the end to make them extra crispy. Make yourself a pisco sour, and try this recipe, it's a must!

Cranberry Surprise Pie

I make this every thanksgiving, for years now. It's sweet and tart at the same time, super easy to make, and tastes delicious with some vanilla ice cream! I'll try to remember and take a photo of it next week when I make it again… everyone's looking forward to it… I usually have to make it again the next day after because we can't get enough! :)
