Downeast Maine Pumpkin Bread

Very good! I only used 2 cups of sugar and it still came it awesome! I actually don't think it needs 3 cups of sugar. Thanks for the recipe!

Family Casserole

Reviewed: Oct. 11, 2008
I do not like giving bad reviews but this bland recipe is just not worth the incredible effort. I will stick with the recipes that use uncooked rice and chicken. One reviewer said that curry might add some flavor and if I ever have leftover chicken and rice, I might try that. However, I doubt this will be made again in my house.

Chris' Bay Area Burger

Reviewed: Oct. 10, 2008
Strange, off taste. A bit dry. Not sophisticated. Changes: * Added additional fresh basil * Reduced salt as suggested in various reviews, but that was a mistake-- too bland. * Added chopped onions. Suggestions: * Maybe try cayenne pepper.... * Salt as directed, don't bother with onions.

Indonesian Fried Rice

Reviewed: Oct. 5, 2008
Nasi Goreng - This recipe works best if you use rice made the night before and it is cold from the refrig. I always use jasmine rice. If you do not have 'kecap manis' you can use ketchup mixed with a little brown sugar. I also add chicken to mine and have used tofu. I simply saute the garlic and onion, add one chicken breast thinly sliced with the egg, then I add the veggies , chili's (always red) and season with some salt and white pepper. Once my veggies are cooked I add the pre-cooked rice and the sauces. I may cook for 5 minutes or so.

Baked Ziti IV

Reviewed: Oct. 3, 2008
i made this for my boyfriend's birthday. after tasting it, he said it was even better than lasagna, and lasagna is his favorite dish. the only changes i made were adding some italian seasoning to the meat mixture, mixing the sauce with the noodles, and adding a little more parmesan than called for on top. delicious!!!

Savory Crescent Chicken

Reviewed: Oct. 3, 2008
these are really good, even if you do use the canned chicken! i omitted the onion and pimentos and added some garlic powder and parsley to the cream cheese mixture.

Meatball Sandwich

Reviewed: Oct. 3, 2008
my boyfriend and i LOVED these! this made a lot of meatballs for me as well. i used a little more garlic, a couple dashes of black pepper, mozzarella instead of provolone, and i skipped the garlic powder and salt on the bread - didn't really need it.

Eggplant Rollatini

Reviewed: Oct. 3, 2008
I can eat eggplant made this way. Even the kids ate it and liked it. I sweated it out with salt as suggested, added spinach, garlic S&P and nutmeg to the ricotta, had to make my own breadcrumbs and pasta sauce because i ran out. Kind of labor intensive though, not a great recipe for a weeknite without all the ingredients on hand premade. Probably took 1.5 hrs total for making 7 rolls. and you use more than 2 tbspn of EVOO to fry. Leftovers were good as well. had w/ brown rice. would make again for a weekend meal

Slow Cooker Adobo Chicken

Reviewed: Oct. 2, 2008
This is great but we always add; 1 tbsp brown sugar, black pepper corns or fresh ground/cracked pepper, 2 bay leaves, 1/2 tsp red pepper flake and some fresh ginger. I also like to season with salt and pepper and brown my chicken in a little garlic infused olive oil first...

Pesto Cheesy Chicken Rolls

Reviewed: Sep. 29, 2008
This turned out really good. I used the thin breast cutlets, so I wouldn't have to pound the chicken, it worked wonderfully. Easy to roll (start with small end), held together nicely. Tasted good! Minus one star because there is a feeling like something is missing, or it needs just a little bit more.
