Garden Tomato Salsa

Reviewed: Jul. 23, 2008
I used red tomatoes and yellow variety tomatoes. I also used half of a deseeded jalopeno since I'm breastfeeding (I dont want it hot). I also subsituted garlic salt for salt but I think next time I will stick to the recipe and use salt because the garlic salt wasn't enough. I will also add minced garlic nextime.

Barbequed Ribs

Reviewed: Jun. 11, 2008
This recipe is now my go-to for ribs! I just put the rub on the raw meat and refrigerate it overnight. The following day I bake them per the recipe (but wrapped in a foil packet) and may or may not actually grill them. When I'm not going to grill them, I just put the ribs in a foil packet with the unsimmered sauce and bake as usual. They come out amazingly tender, and the sugar in the sauce actually chars a little to make it almost taste like it was on the BBQ! The rub is what makes the ribs. And it even tastes great on chicken!

Old Bay® Potato & Green Bean Salad

Reviewed: Apr. 21, 2008
I prepared this recipe last night. My wife wanted to make sure there were going to be leftovers -- for breakfast!! Needless to say, she really liked it. I made a few modifications just because I had the stuff on hand and thought it might work well with the recipe. I cubed and stir-fried half of a boneless, skinless chicken breast and tossed it in the salad. I also added a teaspoon of minced garlic and 3 baby carrots finely chopped. I added about 1/4 cup of finely chopped fresh mushrooms. Served everything over a bed of baby spinach leaves (about 1/4 cup) in each bowl. I re-calculated the nutritional values after my modifications. The new calorie count was 163 calories, 3.5g fat, 27.9g carbs, and 5.9g protein. Very healthy and very good.

The flavors just clashed. If I could do it over again, I would have added a lot less garlic and onion. I think thats why the flavors clashed so much. The mango and the onion just didn't do it for me.

Burgundy Pork Tenderloin

OMG!! This was awesome!! The aroma through the house, as it cooked, was 'intoxicating'. I had originally cooked this for a Sunday lunch. There were leftovers and no one complained when I suggested serving them for dinner as well. It was the first meal that I had cooked in my brand new electric roasting pan. Since there are so many of us, I doubled the recipe (which means lots of gravy). Somebody, give me a straw!! We actually dreamt about this recipe that night. I will definitely be making this again soon!
