Super Short Ribs

Lemon Blueberry Bread

This bread is definitely more like a pound cake than a standard quick loaf bread. It's dense and buttery and delicious for breakfast with a cup of coffee! I doubled the recipe and baked it for about 45 minutes in a 9"x13" pan. I reduced the sugar to about 1.5 cups and used a whole bag of frozen blueberries (almost 3 cups).

Garbanzo Bean Soup

Despite the positive reviews, I found it bland and uninteresting. I used a clove of garlic (blended with the garbanzos), dried rosemary, and omitted the pasta as I didn’t have anything appropriate on hand. I don’t think any of these changes made an important difference. I’ll probably use the rest as a pasta sauce, maybe adding some olives, or something to give it a stronger flavor.

Potato Chips

I had a hankering for potato chips and thought I'd end up making something in the oven. When I saw this recipe, I couldn't believe potato chips could be so easy! I might never buy chips again! One medium sized russet was about two servings' worth of potatoes and took three batches to cook. I don't have a mandolin, so I had to hand-slice my potatoes. Uneven as they were, they still cooked perfectly! I lined my dinner plate with parchment paper for easy removal and it took about 6-1/2 minutes. Without parchment, it only took 4-1/2 minutes but my chips stuck to the plate.

Mexican Rice II

This tasted fine (like other reviewers said, it won't knock your socks off). I prefer my Mexican rice a bit drier, I might modify this with tomato paste next time, and add some jalapeno peppers.

Roasted Rack of Lamb

It turns out I didn't have any bread crumbs so I substituted Panko for the bread crumbs. I crushed the Panko bread crumbs to make the texture more fine like regular bread crumbs. I didn't have any rosemary so i substituted the rosemary for 1/2 tsp. of dried Thyme. I was worried it wouldn't taste good with all the changes but everyone loved it and said it was restaurant quality! It did take a little longer than the recipe says (I don't like my meat rare). I think it took a little over 10 minutes than the recipe asked for.

Baked Apple-Raisin Stuffing

Very simple! I didn't have 'poultry seasoning' so I just gave it a pinch of thyme, rosemary and celery seed. I also substituted dried cranberries for the raisins. Wonderful side dish for my chicken! It was a taste of Thanksgiving...in April!

Banana Peanut Butter Bread

Wonderful! not a stong peanut butter taste more of a background flavor. everyone loved it. I used 3 bananas because they were on the smaller side. No other changes... Cant wait to make again!
