Blueberry Cream Muffins

Reviewed: Jul. 26, 2009
I made these for a bridal shower brunch and everyone loved them. My husband said they were the best blueberry muffins ever. He was eating the batter(that is just what he does) and he kept saying it was so delicious. Definitely a keeper!!

These were the best spareribs I have ever had. I baked them as directed, and then grilled them for the last 30 minutes. They were awesome, I loved the sauce!

Panzanella Panini

Reviewed: Jul. 24, 2009
Can't go wrong with simple, fresh, and tasty! I've been a fan of panini's for years. I do make the following modifications on this recipe...Instead of using olive oil I lightly spray the bread with olive oil flavored cooking spray (tastes just the same but without the fat), add sliced red and green peppers to the sandwich along with yellow onion, and crushed red pepper flakes. You can even add sliced mushrooms as well. Thanks for sharing the recipe, delicious!

Pineapple Angel Food Cake I

Reviewed: Jul. 24, 2009
Very healthy, easy, and flavorful recipe! I made the following modifications...I added a can of mandarin oranges to the mix along with the crushed pineapple. I used a 9 x 13 pan (sprayed with Pam) instead of the bundt and had no problems with it falling, however I left the cake in for 35 minutes. I let the cake cool upside down on a cooling rack. Along with fellow reviewers I added crushed pineapple to the cool whip along with a few drops of yellow food coloring. Very simple and great tasting recipe, thanks so much for sharing it!

Corn Dog Muffins

Reviewed: Jul. 24, 2009
These little muffins were very tasty and also quite filling!! Very easy recipe. I did make a few modifications...I omitted the brown sugar completely, but used honey flavored corn bread mix. I also added 1/4 of a chopped jalapeno to add just a kick of spice. I am vegetarian, so I substituted veggie hot dogs and worked out perfectly. Served with ketchup and mustard. Easy, quick, healthy, and yummy meal! Thanks for sharing this recipe.

Black Bean and Salsa Soup

Reviewed: Jul. 24, 2009
One of the easiest and flavorful soups I've tasted!! This one is definitely a keeper! I did make a few modifications... I added 1/4 onion, 1/4 jalapeno, garlic powder, and a handful of cilantro to the food processor. Along with other reviewers I also reserved one can of the black beans to add more texture to the soup. Used medium heat salsa and it was just perfect with just the right amount of spice. Will make again and again. Thanks so much for the recipe!

Spicy Strawberry Salad

Reviewed: Jul. 21, 2009
I followed this recipe very closely-not my usual M.O.-& it was fantastic! Very well recieved by everyone that tasted it & seconds were taken! All I added was some celery as I had a lot & I switched to almonds for the nuts. The dressing goes well w/it & really thickens afterwards also. I used an egg slicer to slice the strawberries-that made it very uniform & much easier! Thanks, Leslie-I'll be making this often.

We love nachos and this recipe is excellent! Even my one year old son loved it. I omitted the tomatoes and added a dash of cumin and paprika. This is a great recipe to play around with. I will be making this again and again!

Slow Cooker Chicken and Dumplings

Reviewed: Jun. 30, 2009
I stuck to the recipe as is, and it turned out DELICIOUS! The house was filled with warm, yummy smells all day. This is comfort food at it's finest! The only reason I gave it four stars is because while it is big on flavor, the chicken and dumplings end up looking like a weird mush. Don't be turned off by how it looks though, the taste is well worth it.

Sour Cream Marinated Chicken I

Reviewed: Jun. 18, 2009
The recipe in and of itself is not good, but omit the vinegar completely and you have a winner! I made this chicken last night, and before I added the vinegar to the marinade I tasted (hint hint) what I was mixing. Finding it very tasty, I left it at that. The vinegar would've ruined the whole thing. So, 5 stars for the recipe without the vinegar, 2 stars for what could have happened if I didn't know what I was doing.

I would refer to these as chimichangas or flautas NOT enchiladas. Whatever you want to call them, they are awfully rich and just okay in my book.- Would not make again.

Home-Style Scalloped Potatoes

Reviewed: Jun. 5, 2009
I read all 100+ reviews first. I pre-boiled the potatoes, then sliced very thin. I used a large crockery square so there was just one layer of potatoes. I used heavy cream, as I needed to get that used up, & put in (dried) minced onions, some minced garlic, some parsley & added a slurry of flour & water stirring it in slowly. After pouring the sauce over the potatoes I crushed a bit of rosemary over the top, then sprinkled some Parmesan cheese, then a light dusting of smoked paprika. I baked at 375 for 1/2 an hour. Hubby & I LOVED it! I will be using this often! Thanks for the recipe, C. E.

Antipasto Pasta Salad

Reviewed: May 28, 2009
Very tasty and my husband loved it! I excluded the bell peppers (cuz I hate 'em), used sun dried tomatoes which really gave it a nice flavor and only 1 tablespoon of the oregano (2 tablespoons just looked like too much). Found me a nice new recipe for work potlucks! Woo!

Brown Sugar Smokies

Reviewed: May 27, 2009
I also would rate these higher if I could.. whoever came up with this recipe is a genius. The only thing I do differently is I skewer them individually on toothpicks then roll them in brown sugar, and bake them in a foil pan that I can just throw away because the cleanup is a hassle. I also like to broil them for a couple of minutes after baking to get the bacon nice and crispy. I leave them on the toothpick skewers so people can avoid the sticky fingers that comes with picking them up. They are DELICIOUS, and soon you too will be the toast of the picnic if you bring these around!

Perfect Cheesecake Everytime

Reviewed: May 26, 2009
I'd never made a cheesecake before in my life but finally got nerve enough to try one. I reviewed many but settled on this one because it seemed simple and straightforward. While it was relatively simple, the flavor was anything but. This cheesecake was fantastic and certainly a crowd-pleaser. I'll be making this again and again.

Orange Cream Cake III

Reviewed: May 24, 2009
Used a white cake mix w/pudding in it-what I had on hand. Had regular pudding mix, so made that & let it cool,& mixed in a cup of sour cream flavored w/Watkin's Mandarin Orange Fruit Dip mix & covered the cake w/that. Everyone liked it, but want to make it w/the original recipe also as some of the people would like it even sweeter. Used a spoon handle to poke the holes & the color was very pretty. Thanks for the recipe.
