Make Ahead Lunch Wraps

Reviewed: May 23, 2009
This is a great recipe for a healthy, quick meal. Like other reviewers I tweaked it a bit- I first cooked some onion to add some flavor and threw in cumin as well. They are never exactly the same each time I make them. I throw in all sorts of things and different amounts of each-based on what's on hand- and they always come out great. Often times I get more than 8 wraps and they freeze great.

Baked Potato Soup

Reviewed: Feb. 23, 2009
Great recipe. I made this with minor changes: no salt, less basil, no cream and didn't bake the potatoes beforehand (just peel, chop and add to the broth). Served with a dollop of sour cream, a sprinkle of cheese and crumbled bacon then topped with green onions. Very tasty!

I've been making these cookies for years. To this day, my grown children beg me to bake these special cookies around the holidays. Those Swedes are geniuses when it comes to baking sweets.

Lighter Banana Muffins

Reviewed: Nov. 14, 2008
I liked the recommendations from Flooeyblue, so I followed her additions/ modifications to the recipe. I really like these! I was trying to find some breakfast receipes for my banana-loving 16 month old and these are perfect. I give four stars because of all of the changes to the recipe, but I since I am not an adventurous baker/ cook, I love seeing how others modify recipes.

Italian Style Pork Chops

Reviewed: Sep. 29, 2008
This is a great recipe! Even my boyfriend who's italian, said that they tasted just like grandmas. The only thing that I would change is the mixture made WAY too much. Id cut the parm and crackers in half and for some reason, it took my chops 1.5 hrs to cook, not 30-40 minutes.

Low-Fat Blueberry Bran Muffins

Reviewed: Jan. 31, 2008
Excellent recipe! Instead of blueberries I used 3 peeled, cored, and chopped Granny Smith apples and added about a tbsp of cinnamon in with the flour mixture. The batter could have filled more than the 12 cup muffin pan, so I filled each cup to the brim and lowered my oven temp to 350 for about 18 minutes (until muffin top sprang back when touched), they rose perfectly. I let the muffins cool completely before removing them from the pan to let them set because they were so moist. My 10 year old son said they were like store bought muffins!

Quick Italian Vegetable Soup

Reviewed: Oct. 16, 2007
I love veggie soup, and this recipe proved to be so easy, quick and delicious. My husband, a chef, loved this recipe too! The only changes I made were I used halved grape tomatoes, added a bit of V-8, and didn't add any salt to the soup. My son doesn't like celery so he turned his nose up to the soup so for lunch the next day my husband pureed the soup in the blender, put it back in the pot, added a little milk and chopped sausage. Our son LOVED it, he thought it was a Mexican bean soup :) This method works for homemade mushroom soup too!

Beef and Bean Chimichangas

Reviewed: Sep. 4, 2007
I changed up the recipe a bit since I am allergic to beans. I fried up the hamburger meat, added garlic powder , onion powder and chili powder to taste. then i just put the meat, then some taco bell hot sauce packets (kids request) and monterey jack cheese. rolled it up, basted with butter and baked it. i garnished it with some lettuce and a spoon of sour cream. my kids loved it and i didnt expect them to!

Chewy Chocolate Chip Oatmeal Cookies

Reading the other reviews i decided to use 1.5 cups flour and i cooked them for 14 minutes and they came out fine. They seemed a little too oatmealy for my taste. But they were very good. My boyfriend tells me oh I hate oatmeal. But he took one anyways, and then another, and another.... so I guess they were good!
