About me:
I have never been a big fan of cooking- I was never really taught how to and the only time I was ever in the kitchen was to help with baking chocolate chip cookies with my Mom. I really enjoy baking when I find the time. Every once in a while I find myself in a two week frenzy of cooking- for some reason I am inspired to try a new recipe each day of the week. Once the frenzy is over, I won't step foot in the kitchen for a while. Luckily I was blessed with a husband who likes to cook. That all went in changed when he was accepted to grad school and now has no time to cook. Add to that a newborn and I'm surprised we eat at all (thank God for Trader Joe's prepared meals!). We are starting to get the hang of our chaotic life and cooking is back in. It's all about quick, easy and healthy.

Make Ahead Lunch Wraps

This is a great recipe for a healthy, quick meal. Like other reviewers I tweaked it a bit- I first cooked some onion to add some flavor and threw in cumin as well. They are never exactly the same each time I make them. I throw in all sorts of things and different amounts of each-based on what's on hand- and they always come out great. Often times I get more than 8 wraps and they freeze great.

Baked Potato Soup

Great recipe. I made this with minor changes: no salt, less basil, no cream and didn't bake the potatoes beforehand (just peel, chop and add to the broth). Served with a dollop of sour cream, a sprinkle of cheese and crumbled bacon then topped with green onions. Very tasty!
