Italian Salad Dressing

Pretty good, surprisingly sweet. I also used the half basalmic half apple cider combo with extra virgin olive oil. I'd probably make this again.

Easter Breakfast Casserole

Reviewed: May 31, 2008
Great breakfast casserole! I bring it to our family Easter potluck brunch and it's always a hit. Sometimes I'll add mushrooms(sauteed 1st) or chopped tomatoes and just this morning I used the leftover tater tots from last nights dinner instead of hashbrowns. although when making for holidays, I prefer the hashbrowns. I warmed them in the microwave for about three minutes to take the chill off. It's much less time consuming to make the night before as well and it's ready to pop in the oven first thing in the morning. We always have salsa on the table to go with it. I've made this often.

Salami Lover's Italian Pasta Salad

Reviewed: May 16, 2008
This is my family's favorite summer salad! They always want me to double the recipe so there will be lots of leftovers. I use one each, green and red or yellow bell pepper and a wedge of fresh parmesan cheese, grated for each batch. I've tried it with a few salad dressings and the absolute best is Bernstein's Restaurant Style Italian. I'm serious when I say that no other salad dressing makes it taste as good. I've even tried the same brand but creamy italian and it just isn't the same. The trick to eliminating the dryness is to save about an inch or two of the bottled dressing and put it in just before serving. The pasta initially absorbs the dressing and it can get a little dry especially if made several hours in advance or the day before. That last bit of dressing added at the end is the perfect solution to that problem. Just made it for a Mothers Day barbeque and picnic and didn't get to bring any home, again! which is why I hid a bowl of it in the back frig for later.

English Royalty Chocolate Chip Scones

Reviewed: May 14, 2008
I love love love love this recipe. I've used it twice [it's in the oven now, yay]. The texture is perfect, the taste is irresistible, and one good thing is that all of the ingredients are in my kitchen! I don't need to leave my house to buy sour cream. The only thing I did was instead of 3 tbs of OJ, I ended up using 6-7 tbs to get the right dough. Nevertheless, the best!!!

Broccoli with Garlic Butter and Cashews

Reviewed: Apr. 29, 2008
My aunt made this at a family get-together and it was a HUGE hit! Everyone gobbled it up and even went back for seconds. It's 2 days later and I'm totally craving it. I'm sure it would also be great with fresh green beans but the broccoli "soaks up" the sauce perfectly so I think I'll stick with the little trees. :)

Royal Coconut Cookies

Reviewed: Apr. 8, 2008
Awesome cookie recipe! I scaled it down to make 12 servings and I still got almost 50 little 1 inch raw dough balls that came out to perfectly sized baked cookies. What I did to modify the recipe was add 1/2 cup chopped macadamia nuts and about 1 cup white chocolate chips and I baked them for only 10 mintues and left them on the pan for another 2. SO YUMMY! I think that next time, though, I will add even more coconut as I love that stuff and think that coconut flavor, while very tasty, was a little too subtle.
