Downeast Maine Pumpkin Bread

Reviewed: Sep. 30, 2008
I love this recipe, have gotten great comments every time I serve it. I make some revisions, such as half wheat, or applesauce, etc. I don't think that detracts from the overall recipe or it deserving 5 stars as that is a matter of preference as much as anything else.

Slow Cooker Beef Stew I

Reviewed: Sep. 30, 2008
I just served this recipe in the Italian Bread Bowls from this site. It was well received, and I think will become my go-to Stew recipe. My only change might be a bit more salt. I usually do not like a lot of salt, but it definitely needed more. That's the only reason for the 4 stars. And I put in the potatoes much later in the cooking process with the Crock Pot.

Apple Oatmeal Crisp

Reviewed: Sep. 30, 2008
Just served this last night with Vanilla Bean Ice Cream. Was well received. I added a cup or so apples than it caused for, and did not even use close to the 1/2 cup of sugar it called for. That would have been way too much. Otherwise very simple and good. Next time I might add more spices.

Italian Bread Bowls

Reviewed: Sep. 30, 2008
Just served these with beef stew last night. Was very good! My husband said it was better bread than he's had in most restaurants and our dinner guests took their extra bread home. I made the recipe as is, except in 4 loaves instead of 8. Next time I'd like to experiment with whole wheat flour.

Spinach and Leek White Bean Soup

Reviewed: Sep. 18, 2008
I was disappointed. I loved the idea and may use it as base for my own recipe, but I didn't enjoy the taste of cumin in this soup. I love cumin in other dishes, it just wasn't that great. I followed the recipe exactly, and had to add more liquid to get the right consistency. I threw away all of the leftovers, which was discouraging. The reviewer who suggested putting spinach in the bottom of the soup bowl and pouring the hot soup over it to cook the spinach had a great idea!

Stuffed Zucchini

Reviewed: Sep. 11, 2008
This was ok. I think I'll look for other recipes though, I found it hard to adjust for the amount of zucchini as I was working with a very large zucchini and had way too much filling. I never use canned spaghetti sauce, so I want to find something that uses more from scratch ingredients.

Diane's Colcannon

Reviewed: Sep. 11, 2008
I've made this recipe a few times. It does make a lot for two people, but between my husband and I we ate a good portion. =) I find it's a mark of a very good recipe when my husband goes back for seconds! It is a very comforting dish.

Italian Stuffed Zucchini

This was a great, easy recipe. I added a bit of onion and garlic for more flavor as well as a small amount of hamburger meat instead of the meat substitute. thank you for a good recipe.

This was a fantastic recipe. I made extra marinade in a separate dish to brush over shrimp while grilling. Thank you.

Buster Bar Ice Cream Dessert

Reviewed: Aug. 4, 2008
Based on the response I had serving this at a family get-together over the weekend, I had to give it 5 stars. Everyone was impressed that the fudge saunce was from scratch- and it wasn't difficult at all! This is the first ice cream dessert I've really done, I usually bake something. It was nice to not turn on the oven for a dessert. My in-laws were thrilled that I gave them the leftovers.
