Sweet Honey French Bread

I substituted 1/2c of the white flour for whole wheat flour and then used this bread for the recipe "Make Ahead French Bread" Extremely tasty!

Mini Zucchini Bread

So good!!! I am making this one again, and I hardly ever do that. I made a few changes to the recipe: 2 egg -> 2T ground flaxseed and 6T H2O; 3/4c white sugar -> 1/2c white sugar; 1/2c oil -> 1/2c applesauce; 1.5t molasses -> 1T honey; 1c zucchini -> 2c zucchini; 1.5c all-purpose flour -> 1.5c whole wheat flour; 1/2t cinnamon -> 1t cinnamon; 1/4t baking powder -> 1t baking powder; no nuts. I put the batter into a 11x7 baking dish and baked at 350F for about 50 minutes. I say "about 50" because I took it out twice thinking it was done but when I cut into it, the center was still a little gooey. Just keep an eye on it and don't turn your oven off until you're sure you are done cooking your delicious zucchini bread

Soft Polenta with Spicy Tomato Sauce

I didn't have mushrooms, red pepper flakes or sherry. So I substituted the 1/2t pepper flakes for 1/2t cayenne pepper and the 1/4c sherry for 1/4c white balsamic vinegar. I added an extra 1/2t oregano and omitted the green onions. It turned out delicious!!

Chocolate Orange Truffles

Easy to make and the flavor is delicious, if you keep them cold. I found that room temperature they aren't that great, however if you keep them in the refrigerator until you eat them the flavor is much better. Keeping them in the freezer is the best! I rated them a four instead of a five because I found the texture to be a bit off; you can't tell as much when they are cold, but as they reach room temperature the mouth feel isn't as good.

Cut-Out Cookies

I made the cookies and used a different frosting recipe. As for the cookies, they proved difficult to roll and cut. I ended up doing one cut-out cookie at a time. I made two half batches, one with vanilla and the other I substituted the vanilla for anise. I also added 4 drops of red food coloring to have pink cookies for Valentine's Day. Both cookies had a good flavor and made great VD cookies!

Sugar Cookie Icing

2 t milk wasn't enough so I followed another's suggestion and put in a total of 4 t milk and I used 1 1/2 t vanilla instead of using almond extract. Turned out great

Honey Bran Muffins

German Potato Pancakes

First, this recipe is the best. I served it at Oktoberfest (I know it's not traditional but neither am I) and everyone loved it. I cooked 5lbs of potato's and thought I'd overdone it but I had 8 guests and not one pancake left. (Darn!) I cooked them ahead of time and then re-heated them in a hot (400) oven for a few minutes and they were perfect. I made homemade applesauce and served them with sour cream. I just washed the potatoes and grated them in a food processor without peeling. If you have a question about the green color see my other posting.

This is a great recipe but I would suggest that you mix all the wet ingredients first then add the dry ingredients for the best results. I added pecans instead of walnuts!
