Slow Cooker Italian Beef for Sandwiches

I was surprised how well this recipe turned out. There were no leftovers! Two packets of Italian dry seasoning was plenty. I'll be making again for friends this weekend.

Sour Cream Sugar Cookies I

These cookies get two thumbs WAY up! Every time I bake these I do a double batch because EVERYONE wants some! The dough is soft and cake-y and subtly sweet while the frosting is creamy and sweet. The only modification I make is to add a teaspoon of almond extract to the batter and the frosting and MAN do people go crazy for the almond! The response I always get is, "What's that flavor...I can't quite put my finger on it but it's AMAZING!" It's not over-powering, just a little something different. These are PERFECT cookie-cutter cookies, but do be sure to chill the dough for at LEAST a couple hours (I do mine overnight.) I also bake mine only 10 minutes and they are perfectly soft yet strong enough to support PLENTY of frosting. These are a BIG winner in my book! I have given this recipe to at least 12 different people and they keep passing it on...I love it!

Rhubarb Cream Pie

I changed the recipe a bit: 2 eggs instead of 3, cinnamon with a dash of chinese five spice because I didn't have nutmeg, added some sliced apple and I made a basic crumb topping with brown sugar, oats, flour and butter. It is cooling now...

I used about 3/4 condensed milk and 1/4 low fat milk instead of heavy whipping cream; I also added some chopped rhubarb and 1/2c sugar. Then I baked it for an hour. It is cooling now...

Best Buckwheat Pancakes

Awesome!! This is a keeper for sure! I followed someone else's lead and used 1/2 yogurt and 1/2 milk instead of buttermilk. Taste great like that, but when you add bits of boiled sweet potato, oh wow you are in for a treat!

Fabulous Cilantro Pesto

I used chili powder instead of cayenne, lime juice instead of vinegar and walnuts then let it sit in the refrigerator for a few days. When I mixed it in with the hot pasta I grated parmesan on top. Delicious

Fresh Spring Rolls With Thai Dipping Sauce

These tasty spring rolls make a nice appetizer. I made my vegetarian (no shrimp) and added baby spinach then used a bottle of peanut dipping sauce that I already had instead of making this one. I will make these again.

Apricot Cobbler

I didn't have a measuring cup, so I estimated. I think I did a fair job though because I have been measuring things a LOT this year! I boiled 3/4 c sugar, 1 T flour, 1/4 t cinnamon, 1 c water. Added a large bowl of fresh sliced apricots and 1 T butter. I followed the crust recipe as close as I could though I found that there could have been more. I like my crust. Overall a tasty dessert.
