Fresh Spring Rolls With Thai Dipping Sauce

These tasty spring rolls make a nice appetizer. I made my vegetarian (no shrimp) and added baby spinach then used a bottle of peanut dipping sauce that I already had instead of making this one. I will make these again.

Apricot Cobbler

I didn't have a measuring cup, so I estimated. I think I did a fair job though because I have been measuring things a LOT this year! I boiled 3/4 c sugar, 1 T flour, 1/4 t cinnamon, 1 c water. Added a large bowl of fresh sliced apricots and 1 T butter. I followed the crust recipe as close as I could though I found that there could have been more. I like my crust. Overall a tasty dessert.

Apple Crisp IV

very tasty. I didn't follow it exactly as the kitchen I had to work with didn't have nearly enough supplies (three single guys, so figure). It still turned out great though, recipes where you can bend the directions are the best.

Baked Spaghetti Squash Lasagna Style

Great mix of flavors. I used white jack cheese instead of the others and I just mixed everything together instead of layering. Very tasty. My best friend even had seconds, and he hardly ever likes vegetables

Blueberry Scones

awesome!! I didn't have 1/2 and 1/2 so I used 1/2 c nonfat plain yogurt and 1/4 c nonfat milk. I forgot to add the egg but the scones were so delicious I don't think egg could have improved them

great idea but I substituted the whip cream for non-fat plain yogurt. I also added walnuts and extra raisins (1/2 of which were golden raisins)

Orange Muffins

Extremely tasty, though I did change a few things (I nearly never follow the recipe exactly): 2c flour->1c white bread flour and 1c whole wheat flour. 3t baking powder->2t baking powder. 1/2t salt->1/4t salt. 3/4c orange juice-> 1/2c fresh squeezed o.j. 1/3c vegetable oil->1T vegetable oil. 1T orange zest-> 1 1/2T orange zest. I also added 1/4c brown sugar, 1/2t baking soda, 1/3c plain nonfat yogurt. I tested this out and it was delicious, though with the rest of the batch I added two cups of diced rhubarb and wow did they turn out tasty!

Roasted Beets 'n' Sweets

very tasty dish. I prefer to use fresh garlic over garlic powder so I minced four cloves of garlic and mixed them in. I didn't have an onion on hand so I left that out. When it was done cooking I put some of it on my salad with a little goat cheese. Goat cheese and beets make such a tasty combination

Hearty Multigrain Bread

mm mmm very tasty! I made a few changes: no sunflower seeds or millet. Instead I added an additional tablespoon of sesame seed, a tablespoon of poppy seed, a tablespoon of bran and one teaspoon of whole flaxseed to go along with the one tablespoon of ground flaxseed. Also, I reduced the yeast to one tablespoon and it still rose beautifully.

Make Ahead French Toast

I made "Sweet Honey French Bread" for this recipe. I didn't follow this recipe exactly. For the egg mixture I used: 5 eggs, 1 cup light coconut milk, 1 cup low fat milk, 1/8 cup heavy whipping cream, 1 teaspoon vanilla and 1 teaspoon almond extract. I checked it after 40 minutes and it was still too moist for me, so I baked it an additional 15 minutes. This turned out Extremely tasty! Definitely a keeper, I'm putting this into my hard copy recipe box.

Mini Zucchini Bread

So good!!! I am making this one again, and I hardly ever do that. I made a few changes to the recipe: 2 egg -> 2T ground flaxseed and 6T H2O; 3/4c white sugar -> 1/2c white sugar; 1/2c oil -> 1/2c applesauce; 1.5t molasses -> 1T honey; 1c zucchini -> 2c zucchini; 1.5c all-purpose flour -> 1.5c whole wheat flour; 1/2t cinnamon -> 1t cinnamon; 1/4t baking powder -> 1t baking powder; no nuts. I put the batter into a 11x7 baking dish and baked at 350F for about 50 minutes. I say "about 50" because I took it out twice thinking it was done but when I cut into
