Garlic Croutons

Reviewed: Feb. 10, 2007
They are okay, not spectacular... Followed advice of melting butter in microwave, added italian seasoning, salt, and garlic powder, and later sprinkled on some parsley flakes. Had to add lots of olive oil (too many bread pieces). It's true the crushed garlic burned a little, but taste was still ok. Baked for 25 minutes in toaster oven. Stale bread turned out too crunchy; fresh bread turned out much better, crunchy on outside and soft on inside (but by day two was also too crunchy).

Tomato-Rich Fish Stew

If you like paella-type dishes you'll probably like this. I personally disliked it, but I had to substitute for spices I didn't have!

Cheesy Baked Cauliflower

Reviewed: Feb. 7, 2007
not bad. steamed in microwave for 5:30 minutes. used no mustard at all, used no butter at all, and used 1 heaping tablespoon mayo and premixed with parmesan, paprika, pinch of garlic powder. added shredded cheese. next time: cut up cauliflower (easier to coat in mixture this way), use a thinner coat of sauce (water it down? maybe don't premix with parmesan?), do not add shredded cheese, bake at a higher temp for crispier results?

Day Before Mashed Potatoes

Reviewed: Feb. 7, 2007
Tasty and fatty. But for some reason tastes just like prepackaged boxed mashed potatoes.

Very bland. Tastes almost like plain mayo.

Ginger Steak

Reviewed: Nov. 6, 2006
Good combination. I grilled the steaks on a George Forman grill and over cooked the steaks but the flavor was good with this recipe. I would use this again and cook the steaks for 4 minutes for medium and about 3 minutes for rare steaks.

Spaghetti Squash II

Reviewed: Nov. 6, 2006
This was great! My squash too longer to cook due to its size, about 1 1/2 hours. But the flavor was great. I would do this recipe again. My husband loved it. It's a keeper.

Absolute Mexican Cornbread

Reviewed: Nov. 6, 2006
OH My! Was this cornbread wonderful! I took this to a church function and it was gone in no time. It was so moist. I would put more green chiles in it next time and adapt it for my husband to be able to eat it. He is a diabetic.

Pork Apple Burgers

Reviewed: Sep. 8, 2005
Hey, this was pretty good! I don't often use ground pork when I cook. I left out the egg and pineapple, added a slice of swiss to each one and spread dijon mustard on the roll. I think we will make this again, though I may use ground turkey next time.

Slow Cooker Chicken Taco Soup

Very easy, tastes great. I used vegetable broth instead of the beer and used regular diced tomates w/o chiles; still good even with the substitutions.

Chicken Satay

I reduced the amount of soy sauce to 1/4 cup, and added 1/4 cup water. It was quite mild flavored; I will make it again, but will use more hot pepper sauce.
