Old Fashioned Prune Cake

Good for a sweet tooth. Advice: * Increase the spices. * for dressing, eliminate buttermilk (mine curdled or something, had ugly white lumps) My changes: * reduced sugar to 1 1/3 cup (suggest even less) * eliminated allspice * forgot to add vanilla extract * increased prunes to 2 cups unchopped (soaked and squished) * eliminated pecans * for dressing, reduced butter to 1/4 cup * used honey instead of corn syrup

Deep Dish Brownies

* Used 1/2 cup butter, 1/4 cup apple sauce. Strong buttery taste: recommend 1/4 cup butter, 1/4 cup apple sauce. * Baking recommended 45 minutes, mine was raw, except the edges (and failed toothpick test). Maybe the rack was too low in the oven? Used round pyrex. * Recommended 1 1/12 cups sugar was fine, even though I also used sweetened cocoa powder. * Reduced eggs to 2. * Eliminated baking powder.

i've tried variations: * used chives instead of dill * eliminated bacon * topped on a bed of salad with shredded swiss * added curry powder advice: * instead of ranch, use mostly yogurt with just a teaspoon of ranch * eliminate the cashews * cut avocado into /big/ chunks, and do NOT overmix

One Bowl Brownies

Disaster for me. Used semi-sweet chocolate-- result was a light brown cake unfortunately. And after the recommended 35 minutes, brownie was still so raw. Maybe will try again since this gets such rave reviews.

Blueberry Monkey Bread

pretty decent. the strange thing is, although i don't particularly like it, i CANNOT RESIST continuously popping these little buns into my mouth. changes: used only 2 tbsp butter; used 2 cans pillsbury 10 pack; used frozen blueberry, raspberry mix; sprinkled in some raisins; used a pyrex bowl for baking; results: turned out a little overcooked; i recommend INCREASING the syrup to prevent dryness; did not maintain cake shape after immediately inverting onto a plate, but fell apart;

Crustless Spinach Quiche

Pretty tasty. Had to cook for much longer than 30 minutes-- then again I used a small high pyrex dish. Tips: do not undercook onion; it's ok to double onion amount; add full salt amount if you are using cheddar/monterey cheese combo; add frozen artichoke pieces; bake in shallow container; put tomato slices on the bottom of pan so you can flip it and have them on top.

Sauteed Apples

Syrup was ok, but overall the dish just tasted like apple pie filling. but i did use white instead of brown sugar. The apple type could make or break this one. To try: use less butter. use tart apples, not red delicious!

Southwestern Egg Rolls

Yum! Changes made: doubled chicken and cooked with salt and pepper; whole wheat tortillas; chopped instead of minced everything; canned instead of frozen corn; kidney beans not black beans; cilantro not parsley; a little less chopped pepper; no cayenne pepper; shredded cheddar and white cheese; Changes to try: slice chicken breasts in half to cook quicker; use food processor for quick mincing; less corn but more spinach and other veggies; use lots of pepper (was afraid of it before but it's bland without it); go a little easier on the salt, it's easy to oversalt this! Want to try microwaving them but not sure how to prevent them from drying out-- maybe a wet paper towel and try for 2 minutes on high

Best Ever Banana Bread

Yum! Changes to try: apple sauce substitution for part of oil; whole wheat flour; sprinkle cinnamon and sugar on pan coating (go very easy on nutmeg); don't sift flour etc; bake for only 1 hour or so (1 hour 20 overbaked for me!); but after freezing then defrosting in the fridge for a day, they were PERFECT and very moist.

Not bad-- suggested changes: no lettuce, no cream cheese, more spiciness (maybe add to beans), use high quality thick guacamole. Make sure beans go to edge of dish for dipping ease. Consider individual plates instead of party dish.

Garlic Croutons

They are okay, not spectacular... Followed advice of melting butter in microwave, added italian seasoning, salt, and garlic powder, and later sprinkled on some parsley flakes. Had to add lots of olive oil (too many bread pieces). It's true the crushed garlic burned a little, but taste was still ok. Baked for 25 minutes in toaster oven. Stale bread turned out too crunchy; fresh bread turned out much better, crunchy on outside and soft on inside (but by day two was also too crunchy).
