Brown Rice Lentil Salad

DELICIOUS! it's ugly but it tastes like potato salad... but better and healthier! my changes: * 1 cup cooked rice with bullion * no tomato * twice the green onion amount * garlic powder instead of cloves * balsamic vinegar * much more lemon juice (1.5 tbsp)

mushy consistency. needs more flavor-- more spices? after freezing and thawing, and adding a mollasses glaze, gets rave reviews. people think itt astes like pumpkin pie. my changes: * replaced oil with apple sauce * replaced 1 c. of flour with whole wheat flour

Red Pepper Soup

Tasty but time consuming! Changes: * left garlic cloves whole * sauteed onions and garlic in olive oil in stead of butter while i broiled then peeled bell peppers * 6 colorful bell peppers, cut into strips * one chicken bullion cube dissolved in 2 cups hot water It tasted really good before i added nonfat dry milk, black pepper, and a dab of sour cream. Don't bother with the spices or dairy-- it's delicious plain! And I'm the kind of person who likes spicy food.

Cake Mixes from Scratch and Variations

Tried Yellow Cake variation with oil substitute for shortening. Very nice texture. Edges over-browned. The taste of the cake is rather bland, though. maybe more sugar? Frosting fixes it...

The sugar and shortening don't get smooth, by the way, more crumbly. * skipped vanilla extract and added lemon instead-- yum * needs food coloring, otherwise color is ugly.

Lebanese Chicken and Potatoes

Makes the chicken very tasty. Would be good with potatoes I'm sure. way too much lemon juice though-- cut back to 1/4 cup. * Do not try with peas. they soak up lemon juice flavor, ugh! * works well with canned kidney beans. * plan to toss sauce. otherwise use broiler to evaporate sauce.

Stuffed Eggplant Parmesan

* sauteed 1/2 onion and 2 cloves garlic, then added chopped chicken and a little chopped green onion, salt and pepper * did not use oregeno * salted eggplant shells for 40 minutes and patted up moisture * mixed parmesan, breadcrumbs, and dried parsley (reduced breadcrumbs to 1/4 cup) * cooked for 50 minutes * order of toppings is awkward... try cheese, then hummus, then breadcrumbs, then parsley. * flavors just kind of melt together into a generic thing, so don't worry if you're missing a few things.

Changes: * 1/2 a 1 lb bag frozen spinach + 4 cups fresh spinach (microwaved for a couple minutes) * one egg * 1 cup mozarella cheese + 3 slices cheddar cheese * no bell pepper * sauteed 1/2 onion with 4 cloves garlic and TONS of olive oil * sprinkled a little salt on afterwards * added a chunk of artichoke and asparagus

Spices didn't work for me. Suggest Italian Seasoning instead. Changes made: * No sausage nor bay leaf * More ground beef * More olive oil * More onions and garlic * no canned tomatoes, just tomato sauce * added parsley and two peppers, and cayenne pepper

Oat Applesauce Muffins

Pretty bland. Great filled up with prunes! Followed recipe with modifications: * Added 4 tbsp ground flax seed * Used sweetened applesauce (and still didn't turn out sweet...) * Tried various fruit additions: chopped prunes, crushed pineapple, chopped dried apricots, raisins OK, Next I tried another batch with following modifications: * No sugar (drizzled on a dallop of honey onto each muffin cup before placing into oven * Microwaved an apple until soft instead of applesauce * added 1/3 cup of ground flax seed * instead of soaking oats, microwaved them with a cup of water * no buttermilk * added 1/2 cup water to make mixture more runny * added Lots more prunes

I wasn't raised on this kind of food and have never tried it before, so maybe that's why I don't like it. Suggestions: * Might be better with a tasty canned tuna. I used a cheap plain one. Changes: * Used whole wheat spaghetti * Added peas. * Used yoghurt instead of sour cream.

Spinach Casserole

Suggestions: * Increase the spinach! Could easily double. Otherwise this dish is way too creamy. * Add lots of fresh spinach! Helps with taste. You should actually add after removing from oven (don't worry it won't be crispy). * Decrease the cream of mushroom soup.... not such a great taste, the sweetness of the cream cheese is hidden. * Add a dash of black pepper. * I didn't use the french fried onions.

another pleaser. i serve it upright but i wonder if it would be better flipped upside down? changes: * increased dates to 1 1/3 cups (suggest even upping to 1 2/3 c) * cut dates in half * eliminated nuts * used only 4 tablespoons butter (suggest reducing further to 2 1/2 tbsp)
