Tropical Salad with Pineapple Vinaigrette

I made this for my "luau" themed party. I doubled it all. I followed all but left out the pineapple.Just my choice. I also used toasted almond pieces. A huge hit at party. Went well with the slammin' salmon. Oh, I also used red onion for the color. The vinaigrette is perfect. I put the dressing in a small container and shook it before adding it to the salad. Thank you for sharing!

Hawaiian Fried Won Tons

I grew up on SPAM and its cousin deviled ham. This recipe is great, but, adding chopped pineapple set it apart from others that I have tried.

Carol's Butter Pecan Cake

My family LOVED this cake, even though I over baked it. It was a tad dry but that was my fault. Even so, I was asked for the recipe by 2 people. Next time I will not overbake it it. I added a splash of vanilla extract to the frosting, Yum!

Emma's Belgian Waffles

These were good, but not my fav. The usual recipe I use from my first cookbook uses buttermilk and turns out crispier on the outside and lighter on the inside. I'm big on the buttery flavor I guess. The texture of this recipe was a little heavier than I like, but it worked in a pinch.

Grilled Salmon II

LOVED IT! I did omit the ginger and sesame oil. Family pref. I let it marinate over night. I baked it, I almost blackened it but so moist inside. Children loved it! I will make this again.

Eggplant and Tomato Packets

This is quick and easy. I make a similar version on the stove. The family enjoyed it. I used the tiny chinese eggplant. If you let it cool then it comes out of the foil easier. I cook mine a bit longer only because DH likes it that way! Thank you for the quick dinner side!

Hearty Lasagna

Just took it out of the oven. The only changes I made was to add minced onion to the hamburger as it was cooking, minced garlic and dried basil to the meat sauce, 2 cups mozzarella to the top. I would have given this a 5 but the measurements were off a bit. Next time I will use 2lbs of hamburger and 2 cans of the sauce. {I prefer Hunts 4 cheese blend for sauce, not as sweet as the jar sauce. Tastes more authentic). And 4 cups of ricotta cheese.

Paprika Chicken with Sour Cream Gravy

I just made this for dinner tonite. I changed it around a little bit tho. I had a leftover chipotle chile in the fridge so i threw it in the processor with the sour cream and cream of chicken. AWESOME!!! It came out spicy (just the way I like it) and creamy. I served it over white rice. Will definitly make this again.

Spicy Lime-Cilantro Marinated Flank Steak

AWESOME recipe! I made this with flank steak for Mothers Days and it was such a huge hit that I was asked to make it again for our Memorial Day BBQ. I also marinaded some jumbo shrimp in it and made kabobs. Delish!! We like our food spicier than normal so I used serrano chiles instead of jalapenos. Will definitly make this again.

you can't mess this up. i add whatever canned beans i have. try adding pasta too. just boil pasta seperately and add to soup. that way it won't absorb the yummy broth. my hubby and kids love this.

Nana-Nut Bread

I feel these tasty little banana Muffins , yes I said Muffins are good. I smashed 2 bananas per recipe, putting where it calls for 1/4 cp of splenda , i cut that in half and replace the other half with Splenda's brown sugar added 1 egg and baked them for 25 minutes , and they are GREAT....oh Ps. Instead of buttermilk i use 2 table spoon of dry nondairy creamer to a 1/4 cup of hot water

Molly's Chicken

I used boneless chicken breasts that I had and set the crockpot on high since I started late. I think next time I will dredge in flour as others recommended and use a little more brown sugar. I'd also like to add a little kick and therefore will add a little crushed red pepper to the mix. My chicken was a little dry (next time will use legs), but that seems to be a theme with me. Overall everyone like it.

Coconut Macaroons III

We all really enjoyed this recipe and it was easy to make. Quick too. Next time I'd like to try with almond extract. I accidentally put like 1c too much coconut and then added a little more flour to correct my mistake, and they still came out good. The sweetness factor is a matter of ones palate.

Juicy Roasted Chicken

My family really enjoyed this recipe. I didn't have celery so I stuffed with lemon slices and also used butter inside and out, and sprinkled with dried rosemary. The recipe used the right amount of everything. My chicken came out a little dry, but that is because I'm still testing my TRIVECTION oven.
