Aunt Blanche's Blueberry Muffins

Based on taste, I'd give these muffins a "5" rating. However, as others also shared, I had challenges with them puffing up...they ended up pretty flat. Except for adding 1 tsp. of vanilla, I followed the recipe as written.

Classic Bran Muffins

Yum! I combined the recommendations of other reviewers (applesauce for oil, lemon juice with milk for the buttermilk, increased the vanilla to 1 tsp.) and was very pleased with the results. I'll make these again!

Mama Bear's Porridge

I scaled this recipe down to two servings and followed the directions as stated (except I used brown sugar instead of honey). I thought it was okay, though I prefer Grandpa Hubbard's Oatmeal (also from allrecipes.com).

Seven Layer Tortilla Pie

Very good! I used refried beans (in place of pinto beans) and added a half packet of taco seasoning in addition to a half pound of ground beef. I also threw in some olives and corn and briefly baked the tortillas before using them. My husband gave this recipe a definite five!

Chicken Teriyaki - It's a Secret

I thought this was pretty good and definitely resulted in moist chicken. I marinated the chicken breasts overnight and then cooked them on the Foreman grill. I did add some garlic powder to the mayo/soy sauce mix.

Broccoli and Cheese Stuffed Shells

I thought these were pretty good. I'd recommend adding additional seasonings to the ricotta cheese/broccoli mixture. I sprinkled some extra Parmesan cheese on the shells when serving.

Spinach Enchiladas

SO good! As others suggested, I used olive oil to saute the garlic and onion. I also added onion powder, garlic salt, cumin and red pepper flakes to the spinach mixture. I used flour tortillas because I'm not much of a fan of corn tortillas. I will definitely make this again.

Veggie Pot Pie

I thought this was great, especially since I'm generally used to chicken in my pot pie. I substituted a cup of frozen peas for the cauliflower and left out the celery. I added about two extra tablespoons of cornstarch and tripled the amount of garlic. I couldn't fit all the veggies in the pie crust, so I froze the extra for another time. Very, very good!

Cantaloupe Pie II

Light and tasty pie! As others have already said, the jello does not fit into a pie shell. (I used a deep dish pie shell and it still didn't fit.) I'd suggest either using a smaller box of jello or using a larger pan. It's good pie though!

Pumpkin Coconut Bread

No Time to Cook Chicken

I used cream of mushroom with roasted garlic soup instead of cream of celery soup as others recommended. I seasoned the chicken before placing it in the crockpot and then shredded it before serving. I wasn't that impressed with the recipe and probably won't make it again.

Cracked Sugar Cookies I

Artichoke Spinach Lasagna

My husband really liked this recipe. I diced up some chicken and put it in there along with a layer of ricotta cheese (with egg, mozzarella cheese and parsley). I also used extra tomato sauce. Good stuff!

A quick and easy pie to make...I used raspberry gelatin since that's all I had. As others suggested, I'd recommend reducing the sugar to 3/4 cup.
