Chicken with Stuffing

I put some chopped onion and minced garlic in the bottom of the crock pot. I used four chicken thighs. It was okay...I think I would have liked it better if I had used chicken breasts. I threw in some frozen peas and, as others mentioned, found the stuffing was a bit mushy.

Beth's Spicy Oatmeal Raisin Cookies

These cookies smelled so good while cooking...I think it was the cloves. I put raisins in half the dough and chocolate chips in the other half. I ended up adding some extra flour because the cookies were a little flat. I also had to bake them for about 12 minutes. I used all butter because I didn't have any butter flavored shortening.

Three-Cheese Spaghetti Bake

I'd give this recipe a 4.5 rating. I browned 3/4 lb. of ground beef with a small onion and a few TBLS. of minced garlic and added this on top of the noodles. I added some extra spaghetti sauce and used an Italian cheese blend. This was definitely good and I'd have it again!

Sam's Famous Carrot Cake

I made 28 cupcakes and two mini bundt cakes with this recipe. They turned out very moist. I left out the nuts and coconut (due to family allergies) and frosted everything with Cream Cheese Frosting II (from this website).

Chocolate Mint Cake Squares

This turned out wonderfully! I took Necia's recommendations about the mint layer and added about four drops of green food coloring. I received lots of compliments about the dessert. It definitely has a nice (though not overwhelming) mint flavor.

Cream Cheese Frosting II

I used only 1 pkg. of cream cheese but otherwise followed the recipe. It seemed to be just the right amount of sweetness for Sam's Famous Carrot Cake (which I made into cupcakes). There's more than enough frosting for two and a half dozen cupcakes.

Quick and Easy Chicken and Rice

I was pleasantly surprised with the results of this recipe, especially considering how easy it was to put together. I used Basmati rice, added a tablespoon of minced garlic to the melting butter, used peas instead of mushrooms (didn't have any mushrooms on hand), and sprinkled some Italian seasoned bread crumbs on top during the last five minutes of cooking. It was definitely good and makes a huge amount.

Chewy Coconut Bars

These were pretty good. I used butter instead of shortening, doubled the vanilla and used 1 1/2 cups of coconut. I cooked them for longer than 25 minutes and they turned out quite gooey. Good flavor though.

Apple Enchilada Dessert

A good dessert and easy to put together! I added some nutmeg to the apple pie filling and sprinkled powdered sugar on top of the apple pie filling before rolling up the tortillas. I added raisins to one of the tortillas to try that out and was pleased with the apple/raisin combination. A great Mexican themed dessert.

Garlic Basil Mashed Potatoes

BBQ Glazed Homemade Meatballs

I enjoyed these meatballs quite a bit. I used 1% milk in place of the evaporated milk and cut the sugar in the BBQ sauce down to 1/3 cup. I'd definitely recommend doubling the BBQ sauce as the amount called for in the recipe doesn't even cover each meatball. I served these with the garlic basil mashed potatoes (from this website).

Cranberry Zucchini Bread

Good bread though I think it would be better with more cranberries. I used half whole wheat flour, half white flour to make it a little healthier and reduced the sugar to 1 3/4 cups.

Key West Chicken

I increased the honey and oil and marinated the chicken overnight. I used the full amount of marinade for two chicken breasts. It turned out well though seemed to be missing something. Maybe it needed some red pepper flakes?

Black Bean Soft Tacos

Grilled Chicken Over Spinach

Very good! I marinated the chicken overnight (used only two breasts but the full amount of marinade called for in the recipe). I added a little extra olive oil to both the chicken marinade as well as the spinach saute. To the spinach saute, I sprinkled in some seasoned salt and parmesan cheese. Nice presentation as well as taste!

Strawberry Bread

I used almost 3 cups of strawberries and decreased the cinnamon by half. I also used approx. 1 c. of applesauce in place of the oil and added about a half TBSP. of vanilla. The bread turned out sweet enough for breakfast but not sweet enough to be dessert.

Honey Chicken Stir-Fry

I thought this stir fry was pretty good. I added extra garlic, 1/4 tsp. red pepper flakes and 1/4 tsp. ground ginger. I also ended up putting in extra honey and soy sauce because there didn't seem to be much sauce. At the very end, I put in a few splashes of rice vinegar. Good!
