Chicken Noodle Casserole

Reviewed: Nov. 13, 2009
Very good dish and it makes a lot! I left out the celery and used Italian seasoning in place of dried savory. I served it with sourdough rolls, which made a nice meal.

Banana Banana Bread

Reviewed: Nov. 13, 2009
I was not at all impressed with this bread. Did not have much taste to it. Maybe it needed more sugar? I don't even know. Obviously a lot of others liked it. I'll have to stick to my EBNB recipe that I got off here.

Homemade Albondigas Soup

Reviewed: Nov. 7, 2009
Pretty good soup...I added some fresh bread crumbs to the meatballs, although they still almost fell apart. I left out the celery but otherwise followed the recipe. As others suggested, I made Mexican rice as a side dish (which I added to my own bowl of soup and liked the soup a little better).

Allana's Excellent Potato Soup

Reviewed: Nov. 1, 2009
This soup was so good and very easy. I substituted 8 oz. of the chicken broth with juice from the ham, sauted minced garlic with the onion and ham and used a half cup of heavy whipping cream in place of the milk. I used cream of chicken soup instead of cream of celery because that's what was in the cupboard. And, I mashed up some of the potatoes. I'd definitely make this again!

Spinach and Sun-Dried Tomato Pasta

Reviewed: Nov. 1, 2009
A quick and easy meal to assemble. I added a large chicken breast, which I chopped into small pieces, and about a cup of fined chopped mushrooms. I used medium shells in place of penne (because that's what I had on hand). I served it with salad and bread and everyone seemed to enjoy it. It might have been a bit better with more of a sauce.

Glazed Lemon Bundt Cake

Reviewed: Oct. 31, 2009
The cake had a mild lemon flavor and was very good. The only change I made was to substitute about a quarter of a cup of the milk with fresh lemon juice.

Slow Cooker Ham

Reviewed: Oct. 26, 2009
I used a fully cooked, four pound ham and cooked it in the crock pot for about seven hours. It was good but nothing spectacular.

Crispy Rosemary Chicken and Fries

Reviewed: Oct. 25, 2009
I wasn't all that impressed by this recipe. It might be because I don't really like thighs...I used a mix of thighs and boneless, skinless chicken breasts in this recipe.

Iced Pumpkin Cookies

These taste great! I substituted half a cup of white sugar with brown sugar and used 1 1/2 tsp. of cinnamon and 1 1/2 tsp. of pumpkin pie spice instead of the listed spices. I'm bringing them to a party tonight!

Coffee Shop Corn Muffins

Reviewed: Oct. 19, 2009
These had a sweet taste, though not overly so. I didn't have buttermilk so I used a cup of milk with a tablespoon of distilled white vinegar and let it sit for six or seven minutes. I also substituted half the oil with applesauce. They were good but I'll still try a different corn muffin recipe next time.

Black Bean, Corn and Turkey Chili

Reviewed: Oct. 19, 2009
I used two tablespoons of minced garlic instead of the garlic powder. I browned the meat with the onion/spices and then placed it in the crock pot and added all the rest of the ingredients. I cooked it on low for the day. Very, very good chili!

I reduced the recipe to two servings and added a tablespoon of minced garlic. I marinated the beef for about 30 minutes. Good hamburgers!

Gramma Brown's Corn Chowder

Reviewed: Oct. 13, 2009
Nice soup on a cold, windy day! I left out the celery and sauted the onion and a few tablespoons of garlic in the bacon drippings. I added some extra flour/water because I prefer a thicker soup. It's definitely good though I might try a different chowder recipe next time.

Black Bean and Corn Quesadillas

Reviewed: Oct. 12, 2009
My husband and I enjoyed these quesadillas. I reduced the brown sugar slightly and shredded a chicken breast which I added in with the black beans. I put them in the oven at 350 for 10 minutes instead of using the skillet.

Mom's Warm Milk

This reminds me of having steamed milk. I used a little less sugar than the recipe called for. I'd consider making it again and trying a different kind of flavored extract.

Sweetheart Scones

Reviewed: Oct. 4, 2009
A nice and light tasting scone! I was looking for a recipe to use up some extra buttermilk and this was a good one. I cut mine into wedges since I didn't have a heart shaped cookie cutter and then I spread boysenberry jam in the middle.

Oven Roasted Red Potatoes

Reviewed: Oct. 3, 2009
I doubled the recipe and used only 1/3 cup of olive oil. I cut the potatoes into quarters and followed the recommendation of cooking them on cookie sheets lined with foil. I cooked them for 30 min. at 350 degrees, then another 30 min. at 400 degrees. I also added a couple TBSP. of minced garlic to the potatoes. Very good!

Peach Cobbler II

Reviewed: Oct. 2, 2009
This cobbler tasted great though needed to be cooked for more than an hour and fifteen minutes. I took others' suggestions and reduced the sugar in the peaches to 1 cup and the boiling water to 1 cup. Maybe reducing the boiling water to half a cup would have been better? The cobbler was definitely soupy.

Cabbage Rolls II

I thought these were kind of boring. I added minced garlic to the beef mixture and doubled the sauce. I cooked them in the oven for an hour and ten minutes at 350. I won't make them again.

Creamy Chicken Lasagna

Reviewed: Sep. 29, 2009
My husband gave this a 4.5 rating. I added at least three TBSP. of minced garlic with half a chopped onion, which I sauted together. I also put in about 8 oz. of thawed, squeeze dried spinach into the cheese/chicken mixture. I sprinkled in some Italian seasoning and thought it turned out well. I cooked it in a 11X8 inch pan. Next time, I might use ricotta or cottage cheese instead of cream cheese.
