Absolutely Fabulous Greek/House Dressing

Wonderful and so flavorful. I scaled it down to 10 people and used 1/2 cup oil and 1/4 cup vinegar - mostly red wine with a splash of balsamic and lemon juice.

Classic Bran Muffins

I make these muffins every week. They're so versatile! I add different dried fruits that I pick up at Trader Joe's. I've used dried cherries, apples, and peaches so far. Instead of wheat bran, I've substituted oat bran and I also use whole wheat flour and Splenda brown sugar (1/2 cup).

Grilled Marinated Shrimp

Everyone loved this! I substituted about 1/4 cup of BBQ sauce for the tomato paste which gave it a sweet/spicy kick. I got frozen uncooked peeled shrimp from Trader Joe's, thawed and marinated it. This will be a regular fixture in our house!

Alyson's Broccoli Salad

Really good - maybe my idea of a head of broccoli is not the same as everyone elses but I had to buy TWO bunches of broccoli because it was way too saucy. We add an extra spoon of vinegar for zing, fresh cracked pepper, and omit the raisins. Sometimes we add a bit of shredded sharp cheddar cheese.

Creamy Macaroni and Cheese

My family did not care for this at all. It was a thick glue like paste of a sauce, and way too much of it for the pasta. The color was terrible too - it was a light orange goop that didn't even look homemade.

Roast Sticky Chicken-Rotisserie Style

Stuffed Pattypan Squash

This was incredible. Everyone in the family loved it. One thing though. Next time I don't think I'll saute the onion in the bacon drippings but olive or some other unsaturated oil instead. I don't think that would hurt the dish. My arteries are begging for mercy!

Summer Potato Salad

I have made this 4 times now and we enjoy it. We prefer it with red potatoes and to not use the oil but rather to add a bit more mayo if it needs it. A bit of seasoning and celery salts, and less lemon and you have quite a good salad!

Very good - I added sesame oil and a lot more Sake, and less soy sauce as I felt 2/3 a cup would have been way too salty. We did not have Mirin so I added Oishi sauce and served with sticky white rice and zucchini sticks with onion sauteed in ginger and soy sauce. Really tasty meal thanks.

Pumpkin Cream Cheese Muffins

This is basically the first thing I've ever baked successfully! Haha. I even got the cream cheese filling to work for the most part by trying it a different way for every group of six muffins(it wasn't a very BIG filling, but there was still a definite area that was just cream cheese). To do this, all I did was add a little bit of batter to the bottom of a muffin cup, then used a spoon to make a sort of raised wall around one side. I snuggled the filling against that wall and then added batter to the other sides of the muffin cup and over the top of the filling. Most of them came out with no cream cheese on top but with a nice little section beneath the surface that tasted very good. I didn't use pecans and I added 1/2 tsp pumpkin pie spice to the streusel topping (which I made a double dose of so I could pack it on, mmm hahaha). The muffins turned out VERY good! =D I will definitely make these again, especially come Fall!
