Maverick Moose Chili

I love this recipe, I took it from a chili recipe my dad made when I was a child and added my own touch to it. Very easy to do. Make it in the morning and have it that night for dinner.

Boiled Fruit Cake

These were just alright. The dough was a bit sticky so I had to add a lot of flour for dusting to roll it out. I might try to make a few adjustments in the ingredients if I make them again.

Irish Ginger Snaps

Dough was a bit on the dry side. They came out alright. I would suggest these to be served as a tea biscuit moreso than a traditional cookie.

Dark Chocolate Cake I

Oatmeal Craisin Cookies

I am NOT a baker and not a big fan of sweets, but this was good. I added 1 bag of white chocolate chips and some chopped pecans, soaked my crasins in OJ first and omitted the raisins. Pretty darn good!

Heavenly Shortbread

This is a very good shortbread recipe. Quick and easy. It is very much like the shortbread in Scotland and Ireland. My son says it is his new favourite snack. Perfect with tea or coffee. I will be making this for Christmas to give as gifts for sure!

Tofu and Rice Stuffed Peppers

This was good! Made a bunch of changes - cut the tops off the peppers and chopped the tops (minus stem =)sauteed with garlic and onion. One can diced tomatoes one can sauce. Added fresh basil, dried oregano, bay leaf, pinch red pepper flakes, salt & pepper to sauce - mixed in rice and cheese. Blanched the peppers and drained before stuffing.

Irish Brown Soda Bread

This is a very good and traditional Irish Soda Bread recipe. I added 1 cup of raisins and 1 tablespoon caraway seeds as I like my soda bread eatting with breakfast or tea time.
