About me:
I am 25 years old, I work part time, but a full time mother to my 5 month old son and a full time wife to my wonderful husband.I just recently decided to change my eating habits, and to start being more active(more than just running around, fullfilling the needs of my demanding son :)) I needed to lose weight, so I started doing this workout program turbo jam, and I absolutely enjoy it. I also needed to start eating healthier. I enjoy cooking, and I love, love, love, food and I don't want to sacrifice not having to ever eat pasta, bread, potatoes, all the carbs that i love. But I realized that I don't need to sacrifice my favorite food in order for me to lose weight. I can still have pasta, I just use Whole Wheat pasta instead, I can have potatoes, but instead of using heavy butter on my baked potato, I put sour cream, and chives. Little things like that will help me achieve long term results.

Baked Zucchini

This recipe was pretty good however, My grandma used to make something like this. She called it Zucchini Boat. She got a HUGE zucchini from a farmers market. Cut and boiled it the same way, scooped out the insides. Then put salt, pepper and butter all along the inside of the shell. The seeds and stuff that she scooped out she would put into a bowl with lots of butter, salt, pepper and parmersan. She would scoop it all back into the zucchini and top it off with more parmersan. Put it in the oven to crisp up the top. Then we would eat the filling out with a spoon. Oh man I am going to go make me some zucchini boat.

Sweet and Sour Dipping Sauce

Very good dipping sauce and better than the packets for sure. I made some changes to get it to my liking: 1. rice wine vinegar instead of distilled white 2. 3 teaspoons cornstarch- otherwise not thick enough 3.sesame oil instead of vegetable oil 4. 4 tablespoons brown sugar These litlle changes made it better than take out sauce for us, thanks for the basic recipe-it was a great place to start!

Swanson® Braised Beef with Shallots and Mushrooms

This was delicious! I used regular beef broth and added Worcestershire sauce. I didn't use the lemon zest as I thought would be weird. I think this recipe was a little more work than some, but the flavor was worth it. I took the skins off my tomatoes before chopping them. When it was finished I mixed it up with egg noodles and served with sourdough rolls. A tasty meal I will make again!
