Bubba's Jambalaya

This was great. Very easy to make and very versatile. My husband thought it needed some spice (hence the four stars). I will add some chopped jalapenos next time for a kick.

Brown Sugar Meatloaf

Wow! Absolutely the best and most moist meatloaf I have ever had. I substituted the bread crumbs for oatmeal since it was all I had on hand and it was still FABULOUS! I also squirted about a tbs of ketchup into the mix with a sprinkle of brown sugar. Yum!

Chicken Fajita Marinade

This marinade made my chicken very tender and juicy. The flavor was light and delicious but I felt that it needed a little more "oomph". Maybe some more cumin and some onion powder would have done the trick. I will definately try this again with a few adjustments.

Italian Pasta Salad I

This was so versalite! I love it. I adjusted my salad based on what I had on hand. I used the two dressings, chopped white onions, cucumbers, chopped tomatoes, celery, kalamata olives and whole wheat spaghetti (broken into pieces). It was so light and delicious. Perfect for a hot day like today.

Chorizo Breakfast Burritos

My family is Mexican so we grow up eating chorizo and eggs regularly and I have to say I have never had chorizo with onions and eggs. I thought it was delicious! I use soy chorizo now that I am grown since it is less fatty. My husband loved this (although we did not serve it as burritos, we made tacos instead using corn tortillas). I used about 1/4 less of the chorizo than called for since we made used some earlier in the week. It was great!

A and Z Dip

I made this for my daughter's H.S. graduation party....it was a hit! Instead of pico de gallo seasoning, I used a small amount of fresh, homemade pico de gallo! So good, and it gave even more texture! Delicious....and I used fat free ingrdients, but you can't even tell!

Cucumber Sandwiches III

I made these for my daughter's H.S. graduation party, and they were such a hit!! I had to make more because we ran out! It's such an easy recipe, and the flavor is to die for. To make sure that the cream cheese mixture wasn't too salty, I used the Italian dressing a little at a time, and ended up using only half of it, but this is a great, quick appetizer that is quite healthy if you use fat free or reduced fat ingredients. I used fat free and the flavor was amazing!

Slow Cooker Pozole

Very good basic recipe. Pozole is eaten with shredded cabage, diced onions, lime, sliced radishes, and sometimes cilantro or oregano sprinkled on top and tortillas rolled up in the palm of your hand to dip in your soup.

Chicken Enchilada Soup III

I decided to give this a try since I had all the ingredients on hand (yes, even the masa harina from when I made tamales for my husbands birthday). I found the taste good but lacking something. I added some extra cumin, salt, chili powder and a can of drained corn. I fried tortilla strips and seasoned those with garlic salt and cumin. Those I used as toping. I also added a bit more cheese. Although I found the flavor very good it did turn out a bit gritty. I'll definately use this recipe again since it was so good but I'll continue to tweak it as I go. Thanks for sharing!

Cake Mixes from Scratch and Variations

I tried the chocolate variation and my cake came out fluffly, not too sweet with a very "bread" flavor not cakey flavor. it was good. I used store bought chocolate frosting on it and it balanced out just right since the flavor of the cake itself is not too intense. Mine took about 10 minutes longer to cook in the center and the edges were a tad crispy but still good. I'll make again just keeping a closer eye on the time so that I dont over cook it. With baking it's important to make sure your measurements are EXACT and you follow the recipe as stated. I think that's what some of the bad reviews are really about...people not following directions and messing with the measurements. The batter seemed thick to me but the cake density was fine once baked.

Whole Wheat Muffins

I have a very picky 8 year old who wants everything 'plain'. I was looking for something healthy that he could have for breakfast on our way to school. This was perfect. He enjoyed these lightly sweet muffins with a tall glass of milk.

Bacon Cheese Frittata

Very easy and good. I made this with turkey bacon and 2% cheddar cheese (to cut down on the fat due to DH cholesterol). It was delicious but a little on the salty side. I think next time I will use only half the salt suggested. Otherwise this is perfect.
