Perfect Baked Jerk Chicken

I rarely give low ratings but this just taste weird imo; all I could taste was the allspice... I was expecting a spicy Cajun flavor. I wont make this again!

Serbian Ground Beef, Veggie, and Potato Bake

I didn't expect the hubby to give as much praise as he did over this recipe; he isn't usually excited about casseroles. The changes I made were to use mushrooms in-place of the peppers and I mixed in about 2T of flour into the meat mixture to thicken it up a bit. :)

Chicken Biryani

I used the recipe for the chicken but not the rice since I used a rice cooker. I also used chicken thighs instead of breasts because it's what I had. I did use all the spices and this was very tasty!.. :)

Favorite Banana Blueberry Quick Bread

easy and delicious. I made it with 1/2c white and 1/2c brown sugar. also added some spices: cinnamon, nutmeg, vanilla. used muffin tins instead of a loaf pan and they came out very well. These are great!

Chicken Meatballs and Spaghetti

Mmmm really good; I used ground turkey instead of chicken and cut the seasoning back a bit. I always roll my meatballs and then bake them on a baking sheet before adding them to the sauce. 350 oven for about 25 min. I used regular instead of whole wheat spaghetti; everyone really liked this spaghetti dinner. I didn't tell them it was turkey either!

Parsley-Stuffed Flank Steak

I first seared mine in some olive oil, carfully rolling over until all the sides were browned. This was fairly easy but I can never get this cut of meat to turn out tender!.. It was good but I was hoping for great!

Szechwan Shrimp

My husband really liked this and wanted more so next time I'm going to double this recipe. Fed the four of us but small portions. I subbed broccoli for the green onions and sugar for the honey and used fresh grated ginger (about 2T). Instead of water I used fish sauce and also added about 1T of Tobasco to my sauce as well. I had some fresh chilis so I chopped up those and sauted them with the broccoli. Cut back the chili flakes to 1/4 tsp. This recipe was fairly easy and delicious!Thanks! :)

White Frosting

I love this recipe and have been using it for years! So light and fluffy also not too sweet; it really lets the flavor of the cake shine! I like it on dark chocoalte cake; it looks so pretty! What this recipe doesn't state is that the milk/flour mixture has to thicken (like paste)before it's done; maybe that's why some peoples didn't work...

Best Beef Stroganoff

MMmmm good!.. I made a few substitutions, sherry for the wine and canned mushrooms. I cut the lemon back to about 1T and seasoned my beef well with garlic, salt, pepper and cayenne (my favorites). I had some homemade chicken stock in the freezer and I used that; sprinkled some flat leaf parssley on top when I served it. This is a hubby pleaser!..

Aunt Fannie's Dinner

Mmm reminded me of a Goulash we made in "Camp Fire Girls" I used about 8oz. of macaroni with 1 pound of ground beef. I threw in some diced celery and onion powder instead of onions for the kids sake. I added some chili powder, a dash of cayenne and worctershire sauce too; I just knew what would make this 4 star into a 5 star recipe! When it was ready I put it in a casserole dish and sprinkled cheese on it! The kids will eat anything with cheese on top! :)

Chicken Stock

I only had a meaty chicken carcass but it worked fine with a lighter taste more like broth than stock!... I'm so happy to be making my own chicken stock ( It's so wonderful to know I'm giving my family home cooked soups stews without the added MSG in cubes and cans! :)

Dijonnaise Chicken

I changed it a bit for what I had on hand and it was wonderful! Seasoned the chicken breasts well with garlic, salt, pepper and a dash of cayenne... Browned them quickly in the olive oil. I substituted worcershire sauce for the lemon wich gave it some zing. Then I baked with the Dijonnaise sauce without the oil. Good!

Roast Chicken with Cracked Peppercorn Sauce

Yum!.. The sauce was wonderful and I used Sherry instead of Vermuth; I did have to thicken it because I used half and half instead of whole cream. I also took another tip and poured off my liquid into a saucepan and then left the chicken uncovered for the second hour (6lb chicken) to brown the skin. Really good thanks! :)

PHILLY Creamy Rice, Chicken and Spinach Dinner

This was yummy!!! My husband and I really liked it. It wasn't your typical chicken and rice dish. It was really good with all the veggies! It definitely needs salt and pepper. I made some changes based on the ingredients I had on hand: I cooked the rice in a rice cooker separately with water instead of broth. I cooked the chicken in the skillet with regular italian dressing and olive oil and added about 3 cloves of minced garlic. I salted and peppered the chicken as well. I cooked that until done and added the cream cheese and spinach as directed. I also roasted a red pepper in the broiler meanwhile. Then cooled and peeled it. I chopped it with the tomatoes and added them at the end until heated. Then I mixed in the rice and topped with parmesan. It was almost like a alfredo sauce with veggies added in. I love hot parmesan spinach dip so this was a great recipe for my husband and I. We will definitely enjoy this meal again!
