Hearty Vegetable Lasagna

You can't go wrong with this - it's noodles, cheese and a ton of veggies! I added zucchini, celery, mixed frozen spinach with the ricotta; and used mozzarella. I also used a homemade arrabbiata sauce (from this site) instead of plain marinara for a flavorful kick. A great staple recipe!

Yeah, I'm not even going to try to say these aren't SOME of the best I've ever eaten, because they are... Mine baked for 21 minutes at 300* in an electric oven and I don't think they were as big as directed. They look and taste like professional or store bought cookies - and you can't argue with that.

Chex® Muddy Buddies®

Seriously? I don't think there is a more addictive dessert out there. I had this by a friend and I almost ate the whole bowl. I have a batch in the fridge now and I take a piece whenever I open the door - which is often because I'm baking lasagna!! Why, Muddy Buddies - why do you have to be soooo delicious?!? (PS I used Crispix because the store didn't have Chex - it's just as good.)

Oven Fried Chicken III

This was good, but I was disappointed. I also ended up with soggy bottoms. I followed advice of other reviewers: used half panko, half breadcrumbs; brushed on mayo with a pastry brush; mixed different spices for a kick; baked for 40 minutes at 350 and then another 10 minutes at 425. I would probably make it again because I love this type of chicken but my bf said it was just kind of 'blah.'

Marinated Mushrooms II

This was good. I had to use rice vinegar because that's all I had on hand. I love mushrooms but I felt that this was lacking something - something bulky. I think next time I'd throw in some grape tomatoes.

Christmas Cookie Cut Outs

These cookies are just sweet enough to eat without icing and, when cut a bit thicker, so soft! I had a great time cutting Christmas cookies out of the dough. I will definitely be making these again!

Roasted Root Vegetables With Apple Juice

I made this with what I had on hand, which was 2 sweet potatoes, a rutabaga (sweeter version of a turnip), brussel sprouts and a purple onion. I cut the onion into wedges, trimmed the ends and cut a half inch cross into the bottom of the brussel sprouts, and cut the sweet potato and rutabaga into fries. Tossed with olive oil, salt and pepper on a big sheet pan (with 1 inch sides) 4oz each of apple juice and a fruity piniot grigio--didn't reduce it just pored into the pan with the veggies. Baked for 40 min, taking the sweet potato out after 25 min and turning the veggies in the liquid remaining in the bottom of the pan. Back in the oven for another 15min. Perfect carmelization and could have put the photo on the cover of Gourmet Magazine. (Too bad my batteries were dead in the camera). I will serve this tomorrow nite at room temp with a drizzle of balsamic & olive oiil, along side Firecracker Grilled Alaska Salmon (from this site) and wild rice pilaf. Make sure you use good wine. If you don't want to drink it--don't cook with it as it will intensify the flavor it reduces. I used Clos Du Bois but any good quality white wine would be good. Thanks for posting this recipe.

Baked Spiced Chicken

A good basic chicken. Paprika isn't a spicy flavor for me so I added some chili powder. I also cut way back on the sugar and didn't miss it.

Potato Arugula Salad

Such a wonderful use of arugula! I love the variety of texture and the tang of the vinegar. I let the potatoes soak in the dressing for a few hours before adding the arugula - I didn't want wilted leaves. After mincing garlic all day, I couldn't bring myself to mince more so I used garlic powder instead. I can't wait to make this again!

Sarah's Applesauce

Took the advice of others and threw this in the slow cooker. I'm not an applesauce person (I made them to go with latkes for a party) but this is really good. Doubled the recipe but didn't double the sugar; also, used half white and half brown sugar. I would probably cut back on the water. Chopping the apple: next time, I will do three of the apples into smaller pieces and the fourth in larger chunks - the crock pot doesn't break them down as much as I expected. I'd definitely make this again just for myself!

Balsamic Pea Salad

I was worried that my guests wouldn't go for a pea salad - by the time I finished in the kitchen, there was one spoonful of this left for me to taste... 'nuff said!! I cut back on the mayo (used about a heaping tablespoon) and would cut back even more. I would also try adding more balsamic just because I love that kick. Substituted the feta with chunks of cheddar. The almonds are so perfect in this! I love peas so this salad is like a double whammy of deliciousness for me.

Byrdhouse Marinated Tomatoes and Mushrooms

I would have loved to take a picture of my final product - but the guests finished this before I could grab my camera!! It is fresh and delicious! Made no edits to the recipe and let it marinate overnight. Super easy and a good crowd-pleaser. Looking forward to making it again!

The Best Rolled Sugar Cookies

As kids it was a tradition at home to make and decorate sugar cookies for Halloween, using a roll of Pillsbury cookie dough. Pillsbury has since been my barometer of a good sugar cookie and I've made many that were no where close as good. THESE ARE GREAT!! I rolled the dough into thick strips on a floured cutting board and then transferred that onto a parchment lined cookie sheet. That meant no moving of dough post-cookie cutting. They baked seven minutes and are soft and delicious! (PS I substituted butter with a buttery vegan spread.)

Thin Mint Crackers

Moist Cinnamon Rolls

I have gotten on a "yeast" kick lately and decided to make these rolls to take to work. Boy, did they go fast and everyone wanted the recipe. I thinned out some powdered sugar with a little milk and the zest of one orange. Drizzled over the tops of the warm rolls. I did double the filling as I wanted to have a stronger cinnamon-sugar taste. I could've eaten the whole pan--they're that good! I

Oranged Cranberry Sauce

Excellent flavor! I have never liked whole-berry cranberry sauce before--but I sure do now! I made it exactly as written but did adjust the sugar at the end to suit my palate. (I ended up using 1 whole box plus 4 Tbl. dark brown sugar) I simmered it for 2 hours in a 3 quart pan, adding one cup of water. It thickened up perfectly after chilling. This was so good I couldn't stop tasting it! I gave myself heartburn and had to take some Tums! This would be wonderful as a holiday cheesecake topping or warmed up over vanilla ice cream. Thanks for posting such a tasty recipe. (I am taking it to a potluck in two days. I'll let you know what the reviews are from co-workers). Update: These were such a hit at out party! Many asked for the recipe and wanted to take home the rest (makes a big batch). I plan on canning this recipe next year to give as holiday gifts. Thank you for a great recipe!

Incredibly Cheesy Turkey Meatloaf

We Really Really liked this meatloaf! I added roasted poblano peppers to it. I had Jalapeno Jack as well as Fresco Queso on hand. The cubes held together and we got a nice cheesy bite along with the chili flavor. I used Lipton onion soup mix to give it even More yummyness. Thank you Brooke! I will do this one again.

Potato Latkes I

They're hard work - but so yummy! I boiled the grated potato as per the advice of other reviewers. Used whole wheat flour, doubled the batch but only used 2 eggs total; added pepper; misread the salt and put in too much - which was almost a good thing because there wasn't enough onion so the salt gave it flavor. Will make these again this week and will add much more onion.
