Green Chicken Enchilada's

These are my families favorite enchiladas! They are great for a busy week night. A few simple ingreds picked up after work and dinner will be on the table in no time! The jalapeno really adds a depth of flavor to this casserole. I used tortilla chips initially, for convenience sake Be my guest to make it as lite as you like. It will still work for you:) Put a salad next to these and you have a wonderful dinner you can feel good about serving your family.

Grandma Ana's Mashed Potatoes

These are The mashed potatoes in my house! If instant mashed comes anywhere near the family, they turn on me. We like them chunky, do with them as you see fit. I will suggest the extra pepper. It gives these spuds LIFE, that you don't always get from regular mashed potatoes. Make sure you heat the milk, if not, they are gummy. If I have been known to leave the skins on as well. The skins are so thin now a days, I figure why bother, more fiber and minerals.

Patty's Pizza Sauce

I created this sauce when a friend of mine gave me some beautiful home grown tomatoes and I promised to make something Fabulous with them. I came home and made Jays pizza crust and put this sauce together. MY 14 yo son Still talks about that pizza! IMO, it is the perfect balance of sweet juicy tomatoes and tangy balsamic. I made a similar version with canned tomatoes when the fresh ones were no longer available. That was Almost as good, not quite tho. I hope you try this sauce and like it as much as we do! Best Spanish Rice

I made this rice tonight to go with my meatloaf. I followed Karen H's specific instructions cuz mine almost always comes out gummy and sticky. I am married to a Mexican Man and I know that the rice is supposed to be fried. I think, in the past, I have fried it too much. Please follow karen's instructions and your rice will come out just like it is supposed to nice and fluffy. I will add one thing, after it is done cooking, and sat for the 5 mins, fluff with a fork instead of stirring with a spoon. Very important! I got Rave reviews from the hubby for this rice tonight. It tasted delishious! I will do it this way from now on! Thank You ilovetocook.

Mexican Pintos With Cactus

My hubby loves this! His Mama has been making it for him, before me, for years! I made a pot of beans the other day and Share Bear convinced me to try the cactus. I found this recipe and went to the market and got a jar of cactus. I sauted some onions and added my beans. The cactus is vinegary and spicy. I mentioned to Carlos that they don't have a lot of flavor and he said "No they don't. That is the way they are!" I added 1/2 the jar and heated it up. Really good! The cactus by itself, tastes like pickled green beans. I will of course make this again. Thank You Katz002.

Mom's Best Pork Chops

My DD picked out this recipe tonight and she picked a winner! I had a 1/2 a pack of panco to use up and added them to my crumbs along with a few shakes of Mrs.dash. I put them on a rack and sprayed with Pam. Baked and they were wonderfully crunchy and crispy.My chops were thin and I only needed about 30 mins for them to be perfect. Thank You Arejay59!! I will be using this recipe again and again!

Minted Salmon

I am giving this fish a 4 on account of the family really did not care for it but I did.The mint was not very prominent, I added 2 bunches of fresh mint for 2 1/2 lbs of fish. I used cilantro instead of the parsley. It was easy and quick. I tought it tasted really good! Thanks for an interesting take on salmon!

True Blue Custard Crunch Pie

I loved this pie! I added a layer of rolled out almond paste to the raw pie dough before I filled it. This was the ticket to a yummier pie! I did have to bake it longer then it stated as well. I added crushed toasted almonds instead of the pecans and it was delish!! A scoop of vanilla and this is a real winner! MMM Fabulous:) Thank You Nonnie

Tuna From Can To Frying Pan

Cindy's Awesome Clam Chowder

Holy guacamole, my craving has been quenched! This chowder was just Terrific! I did add chopped onion. That was only thing I changed. Very flavorful, the ff half and half was just the ticket, save some calories but did not sacrifice the flavor. My kind of chowder! I served it with sour dough bread. Exchange Gang Pasta with Shrimp

I wanted to make a shrimp dish yesterday. I found this in my files and said Yes! This is it! I did make a few changes Only out of necessity. I was out of spaghetti so I used Penna instead. I did not have any wine so I subbed chix broth. There was a little too much liquid in the pan,and for that, I used the goat cream cheese I had in place of the 1/2 & 1/2 cream. I Finally found the broccoli Rab, I have been looking for, forever. I added that instead of the spinach.I was pressed for time and used cooked shrimp.This dish was the BOMB!! The Whole family and 1 cousin ate the entire dish!! I sprinkled the parm on at the end and added the tomatoes at the end like some reviews said to. This was a wonderful dish!! Thanks to everyone who contributed to the creation of such a fine meal!! I rounded it out with toasted garlic bread. AAHHH Keeper! Thanks Deb!! You Rock!!

Caramel Popcorn

I made this this afternoon for when the kids got home. I had some kettle corn that didn't have much flavor and used that. I added a 1/2 jar of roasted peanuts I had and was it goood!! I did not bake it the whole time, I was afraid I was afraid I was going to burn it and it only spent about 30 mins baking.I actually cut this recipe in half. It was perfect and soo easy to make. Spicy Baked Sweet Potato Fries

I am so in love with these! I have a hard time getting them really crispy like regular fries. Maybe I will try broiling them a little next time. You can add as much or as little seasoning you want. Heck, change it up once in a while too! GOOD and Good for you!! don't forget to leave the skins on, more fiber that way. Winner! Thanks and will make again and again.

Flank Steak with Garlic Wine Sauce

Roasted Red Potato Salad

I just now made this for dinner tonight. I love it! Lots of flavor.I added some tarragon and mustard to it. It isn't even cold yet and it is yummy already. I roasted the potatoes in a little bacon fat as well. I like the fact that this is not your ordinary old salad. Thank You Ginger. Update: While it is true that I liked this,and when I made it, I thought the family would like it too. Well, it turns out, they don't:( everyone tried it, I was the only one to try it warm, the rest ate it cold. Even my unpicky,will eat almost everything,kid did not like it.They did not like the eggs and bacon in it. Sorry.

Candied Apples III

This is a great recipe, but I changed a few things and have a few tips to make your apples incredible! First, you need a sweet and CRISP apple to get a good result here. I used Honey Crisp apples and got compliments at the Halloween Potluck I took these to about how good the apples were. I used 2 bags of cinnamon disks, double the water and 1 tablespoon of cinnamon extract as my cinnamon disks didn't seem to be quite fiery enough; not like red hots at least. I found that it takes some time to melt this down and before you get there they all combine into a huge piece of hard candy. It was at this point I got nervous, but just keep stirring and eventually you will have everything melted. I used a candy thermometer after all was melted and turned up the heat to reach 300 degrees. When you reach the 300 degrees, it will be a bubbling couldron of candy and will have expanded a bit. Turn off the stove at this time and start your dipping. You will get a gorgeous glossy candy coating that when set will be hard. With the 2 bags this yielded 7 large apples. This will be my go to recipe for candy apples!
