Amazingly good and so easy to make! Make sure to keep the pastry crust cold so that it doesn't fall apart!

Southwestern Bean and Rice Salad

This was a very refreshing, colorful way to serve beans and rice. I used black beans and red pepper (my preference) and it was delicious. I made this a second time using cooked orzo in place of the rice and that was very good, too. You need more dressing, however, if you use orzo. Very nice recipe and I plan on serving it a lot this summer, as it holds well in the refrigerator.

Fabulous Fried Cabbage

simple, perfect, delicious!! i could eat a whole head of cabbage myself made this way! it is exactly what i hoped for. don't let the simplicity fool you - it is full of flavor and i didn't even use all the butter called for!
