Mock Ice Cream Sandwiches

Wow, this receipe went over very well. I didn't have the chips but they were still good. Their better if you let them freeze overnight.

Taste of Home's Double Chili Cheese Dip

This is another recipe I have been making for years. But where are the spices? So bland as posted! Add some cumin and chili powder or whatever spices you want and bump it up some. I skip the olives and would only use the cheddar as a garnish. The cream cheese does the work in this recipe. Use Tostitos Scoops or baked flour chips. A guilt free dip that is VERY popular with everyone you'll make it for. Be ready because people WILL ask you for this recipe!

Stuffed Eggplant Parmesan

I added and additonal 2 garlic gloves season with garlic powder, onion powder little cooking wine for more flavor. I used seasoned bread crumbs but I think the sauce takes most of the good flavor away. Next time I'll take it easy on the sauce.

Sunshine Toast

My mom made this for me growing up but I had forgotten exactly how she did it. I do remember she always made a happy face on the steamed whole yolk with ketchup. We love "Eggy-Toast" and I am thrilled to get the exact directions to do it myself the proper way for my own son. Hurray! This is definitely a recipe you remember growing up and pass down from generation to generation.

Crab Salad

This is excellent! I used imitation crab, (light) Miracle Whip, Splenda and celery salt. My son requested a bit of lemon, green onion and some Pampered Chef Dill Mix. You really should make this a day in advance so the flavors have time to get happy together.

yummy, just used 1/2 cup of soy sauce and it was delish. I served right after grilling and the remaining chicken I let soak in the sauce so it wouldn't dry out. This is a keeper

Classic Stuffed Peppers

I followed the recipe, i used ground chicken instead, but I felt it needed more seasoning. Next time I think I'll cook the meat first so I can check the seansoning before serving. Overall good recipe.

Buffalo Chicken Fingers

Great recipe! I made two minor modifications to please my family. In order to kick up the flavor, I marinated 1/2 the strips in Franks Buffalo Sauce for me and my husband. To make the other 1/2 of the strips kid friendly, I left the cayenne pepper out of the flour mixture and rolled their 1/2 of the tenders first before adding the cayenne to the second 1/2. My kids loved these which is wonderful because they are huge fried chicken nugget fan. They really gobbled these up! My husband and I mixed lite ranch dressing with Franks Red Hot for dipping. YUM!

Creamed Chipped Beef On Toast

Comfort Food! Once I got the roux down (it took 2 tries), it was fantastic. I added the ceyenne pepper, seasoned salt and cracked black pepper. We used the Budding Luncheon Meat. Served it on toasted potato bread buns. I bet it would be great on biscuts! The boys scarfed them down faster than I could serve them. Goes down well with a BIG glass of cold MILK!

White Bean Chicken Chili

Mui Bien! Of course I had to do it "my way". 1. Used 2 nice large hand trimmed chicken breasts. 2. Patted them down with Emeril's Southwestern Essence and lightly seared with onions and some bell pepper. 3. Poured in the chicken stock, two cans of Rotel Tomatoes w/ Lime & Cilantro and a large jar of La Victoria Salsa Verde and added the spices (plus a bay leaf). 4. Simmered the breast 40 minutes then pulled out and shredded. 5. Returned to pot and added beans & a large can of sweet corn. 6. Cooked the chili down several hours and added a couple of cubes of chicken broth and vegetable broth along the way with some water and cornstarch. This is a GREAT, healthy chili with an interesting flavor which we all enjoyed and I will make again. This is NOT a recipe I will share as good chili recipes are "sacred". Ha!

Eggplant Parmesan II

I used frozen eggplant from Trader Joes. Cooked eggplant in oven for about 15 min then took out of pan and followed receipe with the layering of the sauce, eggplant and cheese. Quick, easy and most importantly YUMMY!

Grilled Spicy Lamb Burgers

WOW, I couldn't believe how well the mint complimented the lamb. I topped with carmalized onions and homemade tzaziki yougurt (both from this site)- after tasting this dish I wanted to go slap somebody! - That good!
