Basic Chicken Salad

Reviewed: Sep. 28, 2008
Fantastic base!! A dab of Dijon, sour cream, green onions, and some garlic gave it the customized "oompoh" just for us. I used a salt & pepper rotissery chicken and low fat mayo/s.cream. A wonderful low-carb meal/salad! Great stuff! Will use regularly!!

Play Dough Cookies

Reviewed: Sep. 28, 2008
Absolutely awesome! Kids and parents went nuts! Used another reviewers suggestion and used store bought cookie dough. What a time saver! Also made sure to use concentrated food coloring, a must. Let the kids play with the "play dough" and make their own cookies. Too fun. Make sure to bake long enough, soft cookies will fall off the stick. Cant wait to make orange and black for Halloween, red and green for Christmas, etc. They make adorable gifts when wrapped in cellphane and curling ribbon. I stuck them in a flower pot with styrafoam in the bottom, and gave them as gifts. Thank you so much for sharing your recipe.

I used drumetts for the chicken and cut up flour tortilla strips for the dough. Also you get a good flavor if you use chicken broth instead of water. Season with garlic salt and pepper. Kids cleaned the pot. :)

Barbie's Tuna Salad

Excellent! I also used Pampered Chef Dill Mix and a prepared Sandwich Spread (mayo & relish). Be sure to let it sit awhile or those dehydrated onions will be crunchy. Great as a low-carb salad! Thanks for sharing your secret recipe!

to my surprise the onions are a bit overpowering in this sauce, still good but you have the spicy kick at the end, maybe less onions next time.

OMG Don't let the name fool you, these are really good. I followed step 1 and 2 then after taking the meat out of the oven I set the meat aside and took all the left over drippings in a saucepan added 2 cloves of garlic let it cook for about minute added 1/4 cup of balsamic then 3/4 cup of chicken broth let that simmer for about 2 minutes stirred in about 2 tablespoons of cornstarch to thicken the sauce then added the meat to the gravy simmering and turning meat over once. My side dish was garlic mashed potatoes and stemmed veggies.....I have to cook more next time these were gone so fast....Thanks for this receipe Nelson...wow what a keeper

Peanut Butter Cup Brownies

Reviewed: Sep. 8, 2008
EXCELLENT AND EASY! I made these in my mini muffin tin without liners but sprayed well with Pam. Used the Fudge Brownie mix and followed the box recipe for "fudgy" brownies (using 2 eggs). The cups were filled 1/2 way and I pressed the candy into them. Because of the "fudgy" recipe, there was not that much of a rise and they were very easy to pop out of the pan with a simple twist (when cool of course, LOL). I can see many tasty variations on this with Reeses Pieces, Caramel Swirl Kisses or even Butterscotch chips. Drizzling them with melted chocolate or carmel would be an extra decadent treat!

Coconut Cream Cake I

Reviewed: Sep. 1, 2008
Very good - just on the border of too sweet for my taste though. Does remind one of a tres leches cake. Be sure to use the Cool Whipped Frosting and follow other reviewers advice of poking large holes and soaking the cake until room temperature then refrigerating. We could only wait 7 hours to dig in and it was tasty. Bet it will be GREAT tomorrow. Oh and I made this in a bundt pan because I didn't want a soggy bottom.

Cool Whipped Frosting

Reviewed: Sep. 1, 2008
Really good when you want something other than sickening sweet canned frosting. Lot's of different flavor combinations possible. I used this on a Coconut Cream Cake and used white chocolate pudding with a squirt more of the coconut cream instead of the vanilla extract. The pudding takes away the Cool-Whip flavor very nicely.

Chicken and Pasta in a Mango Cream Sauce

Reviewed: Aug. 18, 2008
I added red bellpepper and fresh mushrooms to the sauce and used 2 Mangos instead of 1 (Delish) Also, I think penne or bowtie would soak up the sauce better. Be sure to season your chicken real good before cooking. I never thought mangos would taste so good in pasta WOW!
