Alaska Salmon Bake with Pecan Crunch Coating

This is a recipe that when I make it, everybody asks for more! Even my mother-in-law, who is the toughest critic says that this is the BEST salmon she has ever had, hands down. Give it a whirl!

Barbeque Halibut Steaks

My boyfriend and I LOVED this. I only marinated in sauce for about an 1/2 hour before hand turning over and basting every 5 min. Next time I will try longer. My only regret is that I didn't make more!

Marinated Pork Loin

Oh my gosh... This was so good! I used balsamic vinegar and added onion powder as recommended by other reviewers. I marinated for roughly 24 hrs. We grilled it and it turned out tender and juicy. We will definitely be putting this into the monthly rotation.

Mandarin Orange Chicken

Family liked it. Used 1 cup OJ as some reviewers stated. Made it very orangy. Might lower to 3/4 cup next time. Let it reduce down to a nice sauce that covered the chicken. Didn't have any cashews or green onions but it still worked out. Next time I'm definitely adding onions and bell peppers because I felt it was missing something.

Marinated Spicy Pork Chops

Marinade was good. I used 1/2 soy and 1/2 worstershire as recommended by other reviewers. I used chili oil since that was what I had on hand. No one thought this was spicy at all. Will use red pepper flakes next time... maybe tabasco. Otherwise this was a good recipe.

Cola Pork Chops

I tried this since a few reviewers that said their kids liked this. My nephew was thumbs down (oh well). My sister and I thought it was ok but nothing to rave about. I made as recipe stated but if I try this again I will definitely use 1/2 bbq sauce.

Dad's Steak Rub

Loved this rub. We used it on a large sirloin steak and it was wonderful. The only substitution I used was Cajun French Fry Seasoning Salt for the seasoned salt. It punched up the heat a notch. Let the rub sit on the steak for about an hour and then drizzled the maple syrup on right before putting the steak on the grill. Couldn't detect very much of the maple but it did have a sweeter taste to it. Next time, we'll drizzle the syrup before adding the rub and then letting it sit. Either way this one is going in as a keeper. Thanks Catherine and Dad!

Enchilada Casserole III

Very good recipe. Even my picky nephew liked this. Used fat free beans to cut down on the fat and couldn't tell any difference. Chopped up a few green chiles and added between the layers. There didn't seem to be enough meat mixture so next time I will take into account some of the other reviewers suggestions. Will try to bake the tortillas next time...

Best Hamburger Ever

Entire family liked these as sliders... We used Hawaiian Rolls as buns. I decided to use McCormick's Garlic & Herb (No Salt) seasoning since it incorporated all of the herbs in the recipe. (Highly suggest this spice mix on chicken and turkey as well! Really good stuff!!) Overall I think this was a very good recipe. Will be making this again.

Strawberry Dream Cake I

Absolutely fantastic!!!!! I followed some of the suggestions on here and used strawberry cream cheese in the cake, I also substituted a Vanilla Cake mix for the white cake, which called for three eggs, so I used two whole eggs and two egg whites. The frosting was awesome. I was a little concerned with it being too runny especially after reading all the reviews...I added a couple tablespoons of powdered sugar and a couple teaspoons of flour. I wish I wouldn't have added the extra sugar, because it made it a pinch sweeter than I would have liked it, but that still didn't stop me from licking the spoon like crazy! I put the frosting in the fridge for a couple of hours, and even stuck it in the freezer for about 20 mins because I was nervous about it, but it ended up being absolutely perfect. It made a ton of frosting and I put a thick layer of frosting in between my cake layers along with a nice layer of fresh strawberries. I think I could have skipped the extra sugar and flour in the frosting and it would have thickened up fine in the fridge after a couple of hours. I also put a couple of drops of red food coloring in the cake batter, because some of the review said the cake turned a strange grey color, and this was for my 4 year old daughters princess party so I wanted to make sure it was nice and pink. Key Lime Pie VII

Delicious! Light and creamy. Everyone loved this... Only note is that this dessert is high in fat from the condensed sweet milk. We used fat free sour cream and could not tell the difference.

Lemon Basil Pesto Flat Iron Steak

The pesto is fabulous! We used top sirloins instead of flat iron steaks. Turned out great. Even my finnicky 9-yr old nephew liked this steak. I just made a sandwich with some of the left over meat with a little of the pesto. The flavor was even better the next day! This recipe is a definite keeper!

Corned Beef and Cabbage

This was very good and so easy to fix. I added some apple juice to it and put the vegies (except cabbage) on bottom per the other suggestions. I will definitely fix this every St. Patty's day.
