Greek Chicken Stew (Stifado)

Reviewed: Feb. 11, 2009
This was SO delicious! This is such a keeper. I think I will make a few modifications next time - a little less olive oil and shallots. I think throwing in a potato might help thicken the consistency a bit, too. I peeled most of the skin off my chicken; the olive oil and chicken grease can be a bit much. Otherwise, this is a fabulous recipe.

Streusel Topped Blueberry Muffins

Absolutely amazing recipe! I was dumb and didn't remember to buy a lemon for zesting when I went shopping for ingredients, but I used 1/2tsp of orange juice instead and they came out amazing. And i used frozen blueberries.

Toffee Bar Coffee Cake

Reviewed: Feb. 5, 2009
I made this the day before an event that I was in charge of baking for, and it was seriously perfect. I don't know how it was the same day I baked it, but it was definitely incredible the second day. Great recipe! Instead of the chocolate covered toffee bars, I just used the toffee pieces. I forwent the nuts due to concerns about nut allergies and chopped some semi-sweet baker's chocolate and used that for the topping. It went over well.

Very good. We used it on swordfish and it turned out excellent. I would add more garlic next time, but other than that it was excellent as is.

Pumpkin Bread

Reviewed: Feb. 4, 2009
I've been baking this recipe for 3+ years but realized I never added my rating. I do use only 2 cups sugar, omit cloves, and add 1 tsp ground ginger. If you love pumpkin bread without nuts this one is a hit.

It was good. I used decaf vanilla flavored coffee and I also followed the other reviews suggestion to beat the heavy cream seperately and then fold it into the cheese/chocolate mixture.

Stuffed Peppers with Turkey and Vegetables

Reviewed: Jan. 30, 2009
Super yummy and easy. The peppers do need to cook longer because they were still a little too hard. Overall, they were excellent. The only modification I made was too add cheese to the peppers about 10 minutes before I pulled them out of the oven.

This was ok. If I made it again (which I probably won't), I would use more tortilla and cut the chicken more.

Delicious Ham and Potato Soup

This soup was really good. I added some shredded white cheddar and more ham because my husband prefers soup to be chunky. I am sure it would be good exactly how it is written.

New Years Black-Eyed Peas

Reviewed: Jan. 12, 2009
This recipe was a hit on New Year's Day since we have to serve Black-Eyed Peas for my Texas family. I did not have sausage or a "ham hock" but used thick sliced cooked bacon and that was awesome. I did not add rice or cheese since we have so much other food to serve that day (pork roast, mashed potatoes, green beans, etc.) I cooked it for a long time and the beans got very soft and tender. By the way I used a whole big bag of FROZEN Black-eyed Peas, easy!

Honey Glazed Pea Pods and Carrots

Very easy and flavorful. Make sure you keep the veggies to "tender crisp" - they should still have the crunch factor after heating in the sauce, Very colorful and helps create a colorful dish depending on the meat / fowl / seafood it is servied with.
