Garlic-Lemon Double Stuffed Chicken

Very good. I too pounded out the chicken before I rolled them up. I wish the breadcrumb/cheese mixture would have been more crunchier. Very rich, will make them again for a special treat.

Teriyaki Salmon

Just tried it and it is the best homemade teriyaki I have had. I did make some of the changes mentioned, 1/4 cup sesame seed oil, and 1/4 cup olive oil and I used minced garlic instead of garlic powder. Also added the suggested 1/4 cup brown sugar. We also used sockeye salmon, and it was "too die for" as my wife put it. Will definitly use this recipe again for the salmon, and as suggested also use this the next time I cook chicken. :JJ:

Oven BBQ Ribs

Chicken Tortilla Soup V

This is a good starting point, but I used some of the advice of the other posters. This is what I did and it turned out AMAZING. I boiled the chicked in water with garlic and salt as advised NMR. I used a full 34 oz of chicken broth, but don't do this unless you are going to cook it down for a few hours. I used much more chili pepper and cumin than the recipe asked for because it was tasting too much like chicken broth. After a shredded the chicken I sauted the onion with garlic and the chicken then added the chicken broth and corn. I let this cook for 2-3 hours on a low simmer. About 30 min before serving I added 3/4 can of black beans. This gave the soup more substance and a great flavor. I served it in a bowl with a small amount of white rice at the bottom. I put 2-3 slices of avocado on one side and tortilla chips on the other than topped it with jack cheese. My friend came over for dinner and a movie she was raving about it all week!!

Zippy Summer Shrimp

fast and easy. I used a lot less lemon juice than the recipe asked for, probably about 4 Tablespoons or so. I also added a lot more salt than I usually use. When the lemon juice is added to the butter and oil it makes a very nice sauce. I served over steamed rice with broccoli and poured the sauce over all. We also ate thai hot chili garlic sauce with it. A very adaptable recipe I'll use again

Amish Macaroni Salad

I thought this was really good and it was completely gone before I even had a chance to have a full serving! I did change a few things. 1) I used bowtie pasta and used about 3 cups. 2) I used apple cider vinegar instead of white vinegar. 3) I used light miracle whip. 4) I used only 1/4 cup of sugar. I will be making this again and again, it was soo easy.

Chiffon Cake

I am a newbie when it comes to cooking, but that doesn't stop my enthusiasm! My first attempt at making this was FIRST CAKE FAIL. It was egg-y, dense, and rather lopsided. The second time I made this was a success! Light, fluffy, and delicious! Some tips for first-timers (of making any cake whatsoever): 1)When separating the eggs, be sure that there are no traces of yolk. Yolk may hinder the fluffiness of the whites. Also, when beating the whites, the highest speed to be used should be medium. 2) Mixing the yolk mixture first may be more beneficial if you tend to be a slow mixer. If the stiffened egg whites sit too long, they begin to "melt" or "re-liquify". 3)When folding the two mixtures together, be sure there are no lumps or streaks. This may sound obvious, but for newbies like me this is important to know. 4) Last but not least, if you're baking in two round pans rather than a big tube pan, watch the cakes carefully as they cook. They are guaranteed to burn or fail if they're in the oven for 55 minutes. I timed the cakes for 20 minutes and checked every ten minutes after that. I think it was a total of 40 minutes to create perfection. ^-^

I thought this was a good basic soup. My husband saif it was "decent." I used Italin seasoning instead of the oregano. I think next time I make it I will try adding some of the modifications the other reviewers suggested.

BBQ Glazed Homemade Meatballs

They're wonderful! My favorite thing about them is their versatility. You can use them as an appetizer, meatballs for spaghetti, or my favorite, meatball subs (just buy hot dog buns, put three meatballs on it, melt some cheese on top or add Parmesan). I didn't think they were too sweet, possibly if your main goal is a meatball for pasta, but otherwise, I loved the sauce.

Easy Alfredo Sauce I

made this last night at the suggestion of a co-worker and was going to post it. The only difference is I used 2 sticks of butter(can never have too much butter), and added pepper. The sauce was so yummy and super easy! we drenched grilled chicken breasts, fettucine, and steamed broccoli and cauliflower with it for a 30 minute meal that was fabulous!

Cakes In A Cone

They're adorable. The only problem is, it gets kind of soggy in the bottom of the cone (so eat fairly soon after) and there isn't frosting in the bottom half of the cone which isn't as desirable. Perfect for kids (who don't require added sugar) but if you'd like, have some extra frosting on hand for when you get to the bottom. Nothing like a double frosted cupcake.

Easter Eggs

Loved this. It was split who preferred coconut and who preferred peanut butter-- but these were a hit (they tasted better than Reese's according to some of my guests). Two things: 1) You need more chocolate than is recommended. I'd buy an extra bag and just melt as much is necessary when you get to the bottom (it also depends on how large you make them). 2) Dipping them in the chocolate is kind of difficult (without making a ridiculous mess). Something really easy is to use chopsticks or skewers as chopsticks. It makes it so you can cover the entire candy without having large holes of missing chocolate.

Pork Tenderloin with Dijon Marsala Sauce
