Bat Cupcakes

Rice and Chicken Casserole

I consider myself to be an above average cook and I could not get this to work. I thought it would be something easy to throw together and forget about. I tried this twice and both times the rice would not cook all the way through.

Amazingly Good Eggnog

Saucy Apple Pork Chops

Cinnamon Rice with Apples

I think it was a little too sweet for a side dish. It almost tasted like apple pie! Which idn't a bad thing, but with dinner it might have been too much. Also my rice took a really long time too cook, so I would adjust the time for softer rice.

Gooey Butter Cookies

These were super yummmy. I used lemon cake mix and lemon extract. I also made the dough the night before and then baked them. Although I did this because I was short on time :)

Famous Pork Chops

These were super yummy and juicy! I too cut back on the butter. For 2 chops I used a little over a tablespoon. I also flipped them at the halfway point and uncovered them for the last 15 mins. Excellent!

Avocado, Tomato and Mango Salsa

A very welcome change from the standard salsa. Didn't look as chunky as the picture the first time I made it. The next time, I used mangos that were on the verge of being ripe, but not soft yet. Gave the salsa a great texture, and the flavor was still great. Will definitely make this again and again and again. My sister-in-law, said she would not make it as it was too labor intensive for her, until she tasted it. She quickly changed her mind.

This was excellent. The only change I made was to use whole milk ricotta cheese. It is a labor of love, but my husband had been dying for homemade lasagna and this fit the bill!

The Best Lemon Bars

These were everything you expect a lemon bar to be. I changed a few things. I used 2/3 of a cup of lemon juice, used to cups of sugar and another tablespoon of flour. They were excellent and very rich!

Killer Shrimp Soup

Well I tried this with suggestions from others to reduce the butter used and go with no salt/low sodium. Bad idea. This dish needs the butter. I went with low sodium broth and unsalted butter but ended up with a saltless flavor. Taking advise from tree hugging people might not be a good idea. I love fattie foods and will use salted butter and not reduce it down to only 1 stick. The tomato paste was way too strong of a taste compared to the restruant and only 2 maybe 3 leveled tablespoons is needed. Other than that, this could be very very close to the original Killer Shrimp.

Sea Bass Barbecue

Definitely a keeper...easy and quick, this is the perfect compliment to Sea Bass. We added a little Old Bay Seasoning to perk it up a bit and that was an excellent addition. Will use this again without hesitation! Also a great way to lightly season fish for other uses like fish tacos, etc.

Garlic-Lemon Double Stuffed Chicken

Very good. I too pounded out the chicken before I rolled them up. I wish the breadcrumb/cheese mixture would have been more crunchier. Very rich, will make them again for a special treat.
