Old Fashioned Carrot Pudding

My mother made a very similar recipe that came from my great aunt Ethel who was born in 1878. There was hardly any instructions on the recipe card and it is steamed in the oven, but no oven temp was mentioned. I use one stock pot surrounded by about 4 C. water, then put pudding into a smaller stock pot, one inside the other, steam at 250 degrees for about 3 hours. It is the most heavenly stuff! You wouldn't think it's rich, but it is. About 3/4 C. per serving is usually enough, and I make extra hard sauce to spoon over it, but without the lemon. Thanks for submitting your version- it will help me to tweak mine. It does make the house smell divine!

Banana Crumb Muffins

I did this exactly as described, except I did them as mini muffins. This is a good basic banana muffin recipe, but I did not find it to be anything new or unusual. The crumb is nice, but kinda overpowers the banana flavor. The banana flavor was nonexistent just after baking, but developed overnight and was better the next day.

Easy Fruit Cobbler

I used fresh peaches, and mine didn't come out as well as I hoped. It tasted good, but the center was too soft. If I make it again, I would stir the fruit into the batter instead of into the middle.

Parmesan Baked Potatoes

WOW! DELICIOUS! The only change I made was to add a little rosemary, thyme and "pizza grinder" to the butter and cheese. I've made this several times using whatever kind of potatoes I had on hand and each time they were great. By request, I've shared your recipe with several friends. Grilled Eggplant, Tomato and Goat Cheese

This is absolutely delicious! My husband and I both loved it. The only changes I made was to salt the slices and let them sit on paper towels about 30 minutes then pat dry. Then I marinated them in the olive oil & balsamic vinegar until I was ready to put the slices on the grill. I grilled one side 7-8 minutes then flipped over and added the goat cheese and tomato slices and grilled another 7-8 minutes. Also, I served them open-faced instead of sandwich style. Thanks so much for a really great recipe!

Onion Cucumber Salad

This is a delicious refreshing salad. I did make a couple changes, using Splenda in place of sugar as my husband is diabetic, and I added a little lime juice. I'll be making this often! Thanks for a great recipe!

Meatloaf Muffins

I just made some meatloaf muffins tonight, but I put a healthy twist on the recipe. I used ground turkey and whole wheat bread crumbs. I also added dijon mustard and worchestershire sauce. I topped them with ketchup and cooked them for 25 minutes at 350. Very delicious!

Teriyaki Pork Tenderloin

This was very easy to make and the meat came out tender and juicy. However, the Teriyaki flavor was faint, so I would do a couple of things differently next time. 1) Double the sauce and keep half out for use after baking, 2) cut pork into bite size pieces before marinating so that each bite is coated in the sauce or perhaps just use the extra sauce to baste while cooking. A good solid recipe. Thanks!

Premier White Brownies

This was very easy to put together and baked up nicely in exactly 25 minutes. I did not have sliced almonds, so left them off, but otherwise followed the recipe exactly. The texture is a bit more cakelike than brownie-like, but it is a very nice, mild white chocolate snack cake. Would make a great base for some other flavors, mix-ins or toppings. Thanks for sharing!

Caramel Bars

These have potential, but I think they need a little work. Tasty and rich, but the bottoms were greasy from so much butter. I thought the caramel flavor was lost in the chocolate. Next time, I would lessen the butter, leave out the chocolate and probably add a bit more nuts. Also, I would use a smaller pan to get thicker bars.

Buttermilk Honey Wheat Bread

I am making this recipe for the first time, chiefly because I had some buttermilk that needed to be used up. I am an experienced baker from scratch, and I intended to bake it in the oven in a loaf pan. I am used to "tweaking" recipes, but I didn't add more flour to the mixture, even though it seemed very soupy. It has been sitting for the first rising for about 1 hour and 20 min. and it is rising a little, but I don't see how I can form it into a loaf. I have a bread machine, but I doubt very much if the results would be any different. I looked back to see if somebody had found out the original author had submitted the wrong amount of flour. I used good bread flour, not all-purpose, and good WW flour. I make two loaves of wheat sandwich every week (good for toast) and that uses 3 C. of WW flour and 3 1/3 C. of bread flour. This makes one loaf- shouldn't this call for about half that amount of flour in one loaf? I hate to think I wasted the ingredients, let alone the labor. I mixed it up in my Kitchen Aid too, as one of the other reviewers did. What is wrong here? If it doesn't do better in another half hour, I'll probably try a different recipe. You have a great site- but this recipe so far is a disappointment.

Chicken Enchilada Dip

This recipe is great. I cook my chicken with Taco seasoning to give it extra flavor. The mayo sounds weird but this recipe is wonderful. This is one of our must haves at party's and of course for Super Bowl. Thanks for the wonderful recipe.

Paul's Pumpkin Bars

Eventhough this recipe is more like a cake, it is a fentastacily delicious recipe. Because almost no one in Japan has an oven, I made these in my tiny toaster oven in muffin tins. They became Paul's Pumpkin Cupcakes and they were AMAZING!!!

Chicken Tortilla Soup V

My husband and I LOVE this soup. This recipe is a great starting off point. I usually add another can of broth and another cup of salsa. I double the cumin, garlic and lemon juice. I also add potatoes, carrots, garbanzo and or black beans. For an extra twist, add diced avocado the last few minutes of cooking. ENJOY!
