Easy Chicken Alfredo

Reviewed: Dec. 6, 2006
This recipe was VERY good and so easy to make. I sauteed the mushrooms when cooking the chicken and I really think that the seasonings I used on the chicken, had A LOT to do with the flavorful pasta. Used linguine and at the end mixed it all together. Will be making again!

Grilled Bacon Jalapeno Wraps

Reviewed: Nov. 13, 2006
These were tasty, I played with the recipe, first of all, after seeding the jalepeno's I threw them in boiling water for a few minutes to make them easy to work with. I also combined cheddar with the cream cheese, and added some garlic salt and pepper. I zapped the bacon in the microwave to get some of the grease out, and partially cook. I had a little difficulty wrapping, so I ended up spreading the cheese, folding the peppers in half, wrapping the bacon, and securing with a toothpick. Baked them at 400 degrees for about 10 minutes then broiled till crispy. Next time I make them I'm going to leave the membranes in the peppers, cause there was NO heat. Also want to try pepper jack in it. All in all a great base recipe for lots of good ideas!!

Burrito Pie

Reviewed: Nov. 7, 2006
LOVED IT LOVED IT LOVED IT!!! Great recipe... the taste was EXCEPTIONAL! I didn't think it was mushy or bland as some of the other reviewers mentioned, not at all! I too added some corn with the meat mixture, cut the recipe in half, and let the meat simmer a while longer with the sauce (about 40 mins). Husband and I enjoyed it and will definitely be making this again!

This recipe was VERY good. My husband thought they were THE BEST!However, I would prefer cheese in mine, just a personal preference. Next time i'll try to add some to see if it blends well together. But aside from that I will be making this dish again!

Calabacitas Con Queso - Zucchini with Cheese

I've got to admit, I wasn't too sure about adding the sugar to this side dish with the veggies and cheese. But I did as the recipe said and LOVED the taste! The taste blended in well. My husband couldn't get enough of it and he usually prefers no veggies.

I gotta say... EXCELLENT sauce! Loved the enchiladas, although next time I may use Monterrey Jack cheese instead to have the cheese melt more. I also baked after rolling them up. Overall my husband and I enjoyed it and I will DEFINITELY be making it again! Thanks for a great, authentic recipe!

Wonton Soup

Reviewed: Sep. 27, 2006
This was very yummy. Made a few changes, first, grated the ginger, and a clove of garlic, and used ground pork. Also threw in a dash of sesame oil, left out the shrimp and brown sugar altogether, and put a little more green onion, cause we LOVE green onions in this house!! To the broth, I added some chopped baby bok choy and sliced mushrooms, MORE green onions =) and threw it all in the pot at the same time as the wontons.... so so so so GOOD!! Been wanting to make a wonton soup for awhile, thanks for the sharing!!

Zucchini Pie

Reviewed: Sep. 6, 2006
A friend gave me some zucchini from her garden, so I tried this recipe out. It was pretty good, though I did make a few changes. I grated the zucchini instead of dicing, used a combo of yellow and green onion, used cheddar and parmesan (only had a little of both on hand), cut the oil in half, and added some diced asparagus. It was good the night I made it, and even better the next day!! I'm going to make it for a cocktail party this weekend, and just cut it into little squares. Yummy!!

Broccoli Cheese Soup

Reviewed: Apr. 6, 2006
This was really yummy. I used 1/2 leeks, 1/2 onions, just cause i LOVE leeks, and threw in 1 minced garlic clove. Only used 3 cans of chicken broth instead of 4, and 2 bags of broccoli. Added not only the processed cheese, but a good couple handfuls of shredded sharp chedder. Also, subsituted the milk with half and half, and used one cup chicken broth to mix with the cornstarch. Then I simmered it for about 30 minutes. My 5 year old loved it, as well as our neighbors (it was a large pot and I had plenty to share.) Served with plain old saltines and it was soooo good!! I'm totally keeping this one!!
