Meatball Sandwich

I never thought of myself as one who liked meatballs, but that is because I never had ones taste like these! I followed recipe to a "T" and they were so yummy I ate them with just sauce. I plan on having them on a roll for lunch tomorrow, and I am sure they will taste even better after sitting in sauce all night. Thank you for this easy recipe, it is a keeper!

Grandma Weld's Cookies

I was wanting to make cookies, but my boyfriend didnt have any eggs so I thought I would try these. They would get a 5 star for easiness. But for flavor just a 3. I even added walnuts and honey because I feared they would be plain, and they were. Because they were so easy and required so little I will make them again but might try upping the extract.

Wonderful Yogurt Cake

I made this using blackberry and pineapple-coconut yogurts and made muffins. The texture of the muffin was nice, but I am not sure if I liked the subtle fruity flavor, it was different. It was a good way to use the yogurt before it expired though. I froze these and will send them with my boyfriend since he loves fruity flavored stuff. I think I will keep this recipe and keep trying different flavors to find one that works for me. I felt like something was missing, maybe frosting since it is supposed to be a cake?

Easy Oatmeal Muffins

A great base recipe. I made these using whole wheat flour, flax seed, cinnamon and applesauce. But didn't use an egg since I was out. They turned out yummy with some jam. This is def a keeper.

Fluffy Peanut Butter Frosting

I love peanut butter. I halved this recipe and added more milk than called for since I was using this to top banana pancakes. It was so yummy! I cant wait to use it to top brownies.

Brigid's Blackberry Pie

I am not a pie person, but my boyfriends family is. So after looking at a few recipes I decided to try this one. I was a little nervous since I have never baked a pie before, and was taking it to my boyfriends parents house for Sunday dinner. And well, I thought it was the best blackberry pie I have ever tasted, my boyfriend liked it to, in fact he liked it so much he boxed up the pie before asking it others wanted seconds.

Banana Pancakes I

I have never had banana pancakes before, but I do love bananas, so I decided to give this recipe a try after all the positive reviews. Oh, boy! Was it delishes! I thinned some PB with milk and honey and make a little PB syrup to go with it. I will definately makes these again.

These were pretty tastey. Followed recipe exactly. I like how it called for butter while most I found called for shortening. My boyfriend almost ate the whole batch alone.

Slow-Cooked Corn Chowder

This soup was so good. It is perfect as is. But, I did omitted the onions and ham since I didnt have any, and was worried it might not have enough flavor. But... it was great. I think next time I will up the potatos. It was runny and I like my chowders thicker. Other than that, it was so yummy.

Mexican Rice II

The rice was good, but not great. I guess I was wanting something more flavorful. But as a side, or put in a mexi dish this rice would work. It was easy to make. My boyfriend liked it, but being from California I love authentic mexican rice.

Spinach Brownies

I am not sure if just my taste buds were off, or this recipe was just not for me. After reading all the reviews and seeing it got a high rating I decided to make this since I had a bag of fresh spinach I needed to use up. Well, I omitted the onions and lessened the butter... and these were inedible. I am sorry, but these were not for me.

Baked Dijon Salmon

My boyfriends mother makes a similar dish with the bread crumbs, and I really like it. But I wanted to try something different and saw this recipe. OMG, this is my new favorite salmon dish. I followed the recipe but I used dried parsley and instead of plain dijon mustard I used a habanero dijon because my boyfriend LOVES everything spicy! So good. Thanks for sharing it.

Oven Roasted Red Potatoes and Asparagus

I followed the recipe with the exception of the seasoning. I have a Italian Herb seasoning that I used in place of the rosemary and thyme. I didn't feel like going out to buy seasonings I never use. I ate 3 helpings, while my boyfriend demanded I leave him leftovers:)This paired wonderfully with grilled tri-tip.

Maple Salmon

This is an easy marinade to make a flavorful meal. I love how it is ingredients I already have. I marinade mine in a ziploc for 30 mins prior to baking. I drizzle half the marinade on the salmon while baking, then add the last half of it the last 5 mins or so. This causes it to thicken up. I then spoon the sauce over each piece of salmon. I usually make more marinade then it calls for so I can have extra.

Playgroup Granola Bars

I made these following a few others reviews. Here is what I did: 3 cups old fashioned oats, 1/3 cup brown sugar, 1/4 cup of wheat germ, 1/4 cup flax seed, Cinnamon to taste, 1 cup wheat flour, 1 cup apple sauce, 1/2 cup peanut butter, 1/2 cup mini choc chips. I did everything the same except I omitted the honey and salt. These were awesome! Similiar to a protein bar. Good for after a work out. I am excited to mix it up and add other things to them.

Honey Whole Wheat Bread

This recipe was only the 2nd recipe I had used with my new bread machine, and OMG... it was wonderful (expect if over rose). The consistency is light are airy and I love the flavor and texture. I followed recipe exactly expect I used all purpose flour because I usually only make whole wheat loaves and that is what I had on hand. And it worked! Yummy!

Best Bread Machine Bread

I used this recipe with whole wheat flour as my first recipe with my toastmaster bread machine. And, I wish I could have tasted it warm, because I am not sure if I care for it with the wheat flour. I will have to make a batch with regular flour this weekend. But, I love how it didn't require any eggs or milk.

Slow Cooked Corned Beef for Sandwiches

This was the best corned beef I have ever had! So tender. I cooked a 1.5 pound brisket in my 2qt crockpot for 10 hours on low. The last 30 mins I added cabbage. I used Ultra Light beer since that is what I had on hand, and the flavor was to die for. I made this with the Easy Irish Soda Bread and it was a big hit!

Amazingly Easy Irish Soda Bread

Not only was this bread easy to make, but, its was so yummy. I cut the recipe in half, but added a hole egg, and it cooked perfectly. The last 10 minutes I placed foil over the top so it wouldn't burn the top. I baked this is a counter top convection oven at 350 for about 30 minutes. I loved this bread, it was dense and slightly sweet. Thanks!
