Funnel Cakes I

Made these for New Years Eve and they were a complete hit! These turn out JUST like the ones you get at the Fair. Top with powedered sugar and Strawberry Comstock. Be careful NOT to over fry them!

Chicken Slop

As is without changes, this recipe is blah boring. Great to serve old people or those who like bland food. Next time I will try adding chedder cheese and some of the other suggestions made by others. It is super easy though, I like that. I also think using a good quality crouton will make a huge difference than the cheap safeway brand.

Pumpkin Pie Bread

STOP! Before you add a whole cup of super fattening oil....use a cup or more of unsweetened applesauce. I rate this 5 stars! I did the applesauce substitution and also used whole wheat pastry flour. I also cut the sugar down to 2 cups (I used cane juice) and dang if these healthier adjustments didn't make it moist and fabulously better for you! I can never justify adding over a 1/4 c. oil to anything baked. The kids loved it. The dogs loved it. And most importantly I loved it!

Orange-Honey Cashew Chicken

This was yummy with a bit of tweaking. You really need to brown the chicken more than a couple minutes on each side...more like 10 mins. Also, orange juice doesn't mix too well with honey unless you heat it first. The family loved it. Thank you!

Absolute Mexican Cornbread

Wowee! I made and used Gulliver's Cream Corn from this site instead of canned creamed corn and dang was it ever good! I halved the sugar and used sucanat instead. I also halved the butter. Excellent!

Zucchini Bread III

I tweaked this recipe and it was fab! 1 cup of oil seemed so excessive! What a load of calories! I replaced with 1 cup apple sauce. Super moist! I also used 2 cups whole wheat flour. Instead of the brown sugar, I used healthier sweeteners. Oh so good! A great way to sneak in zucchini for the kids!

Amazing Chicken

Wouldn't quite say this dish was "Awesome" thought it sounded just too good to be true. It makes ok chicken strips though, really helps keep the juicyness in. But regaurdless you need some kind of dipping sauce or sauce on the side, it's just too boring and definately not amazing.

My Crab Cakes

I, like other reviewers, added 2 cans of crab. Also another egg (2 total)..and I chopped up the green onion in my mini chopper so they were super small and didn't cook them before adding to the mix. Fabulous results and dang good recipe! I cooked them in my cast iron fry pan for super results! The kids loved these "crabbie patties"!
