Cheezy Potatoes

Reviewed: Jan. 25, 2008
Oh man these were good. We actually doubled the recipe and used fresh cut yellow potatoes (skins on) and they were fabulous. It perfectly fills a 9X13 doubled, you will just need to cut them small bite size and cook just a tad longer. Thank you for submitting this one!!

These were GREAT!!! If you overcook the marshmellows a tad til they brown, it hardens when cooled like carmel. My kids loved these.

Pumpkin Butter I

Reviewed: Nov. 10, 2007
This is fabulous but DON'T can it! It's unsafe to do so. A water bath cannot get the core of the sauce hot enough to be safe to can. Only cubed pumpkin should be canned and only in a pressure canner. If you freeze this it will be fine.

Pumpkin-Apple Muffins with Streusel Topping

Reviewed: Oct. 29, 2007
Oh so good. I did some alterations. I substituted 1/2 c. of my homemade apple butter for the oil. I also used whole wheat flour. I cut back the sugar to 1 cup..you really don't need all that sugar plus with the sweet apple butter and all. This was fabulous. I think they are better the next day. Loved it!

Wheat Germ Whole-Wheat Buttermilk Pancakes

Reviewed: Sep. 22, 2007
I made these 2 different ways since I thought maybe the baking soda was a misprint and it was meant to say baking powder? The soda ones didn't come out nearly as good as the powder ones. The soda pancakes were flat yet okay tasting and the powder cakes were tastier, fluffier and better looking. I'll make them again but I'd do it with the baking powder for sure.

I made this twice so far. The first time I thought there was something missing so the next time I added 1/3 c. brown sugar to the bouillon/soy sauce/cornstarch mixture and it was so good. It made it much much better.

Addictive Sweet Potato Burritos

Reviewed: Sep. 8, 2007
Well....these could be good I suppose. The first problem I had was adding 2 cups of water to the beans...why? It would be soup! I was going to because I like following exact directions before reviewing but that would be too icky so I left out the water. I didn't want the beans seeping out everywhere. The second problem was the consistancy of the sweet potatoes after I baked them. I love them and give them to my kids just baked all the time but when you mash them, they need a bit of liquid in there. Otherwise not too appealing and not very spreadable inside a tortilla. So I added some evaporated milk to smooth them out a bit. This is a very odd recipe as it is. WAY too many beans per potatoes. Especially if you add 2 cups of water. I mananged to save this though but will make a few revisions if I make them again...IF I ever do. Just ho hum and the directions were somewhat weird.

Tiny Chicken Turnovers

Reviewed: Aug. 28, 2007
These were tasty little gems! I used 1/2 ww flour on the pastry and cut the butter by 1/2 and it was perfect. I see no need in adding that extra 1/2 cup of butter. I also made them twice as big as suggested so instead of tiny ones they were like toe pies. I brushed on some milk on the tops and there you have it. Great with tabasco. Very kid friendly too.
